A Jade plant (they feel like rubber), they only need water 3 times a month and they withstand extreme conditions.

Especially if your office has fluorescent lights, you may have a few choices. Some succulents don't require much light. Pothos ivy, and ponytail plants definitely would do o.k. under fluorescent lights.

my vote is for a bamboo plant. They thrive in window-less environments and look pretty nice to boot.

You may try the snake plant... It can grow even without tending it... You may also want to plant a dumb cane.
