Cajun Roast Beef Recipe
This Cajun roast beef recipe uses herbs and spices to impart a country flavor. Serve with mashed potatoes to fully enjoy the goodness of the gravy.
Cajun Roast Beef Recipe
4 to 5 pound roast beef, any cut
Cajun seasoning
6 garlic cloves
1 jalapeno pepper, sliced
Worcestershire sauce
flour, for dusting
1 tablespoon butter
water
Preheat oven to 325 degrees F.
Roll garlic cloves and jalapeno pepper slices in Cajun seasoning.
Make 6 slits, evenly spaced, in the roast beef. Stuff one garlic clove and one slice of jalapeno pepper in each slit.
Sprinkle Worchestershire sauce on roast beef, and rub to cover. Dust roast beef lightly with flour.
Melt butter in dutch oven over medium heat. Place roast beef in dutch oven and brown on all sides.
When the roast beef is browned, add water to half way up the roast; cover and place in preheated oven. Bake for 3 hours. Test for doneness. Continue cooking if the meat is not falling off the bone.
When the roast beef is done, remove from the dutch oven and cover it loosly with foil; allow to rest for 15 minutes before carving.
Degrease the gravy, season if needed, and serve alongside the roast beef.

There are several different ways to do a beef roast.
The least expensive and I think a great way, is the pot roast. The pot roast of choice is the chuck roast. I would not suggest a rump roast with this method.
Here is a no frills basic recipe:
A roasting pan with a lid
1- Chuck roast
8 new potatoes (or about 3 or 4 medium size potatoes quartered)
4 or 5 medium carrots quartered
4 or 5 small onions cut in half (or boiling onions whole)
(there is nothing magically about the quantity of vegetables to put in, put in as much as you like. It's all good!)
2 tablespoons vegetable oil
Salt and pepper
Lightly salt and pepper both sides of the roast.
Heat a frying pan very hot.
Carefully pour the oil into the frying pan.(lightly smoking)
Carefully put the roast in the pan and cook about 1 minute on each side. This sears the roast.
Now place the roast into the roasting pan and dump the vegetables on top. Salt and pepper again. Put the lid on and place it into a preheated 325 degree oven for 4 - 5 hours or longer to get the meat fork tender (it gets very tender). The longer the more tender. You normally do not need to add water. Check the roast every few hours to make sure it is not drying out. You should have plently of liquid in the pan after a few hours.
Serve the roast along with the roasted vegetables. A dinner salad is good with this and a green vegetable on the side as well (green beans, brocolli, etc).

Ahh roast beef one of my favorites. When I make a roast beef dinner i serve mashed potatoes and gravy (made from the juices from the roast beef and a water/flour mixture), peas, and dinner rolls...always a big hit with the fam.
I cook it in the oven on 375...the length of cooking depends on the size of the meat. When I cook the roast beef I make a spice mixture of black pepper, salt. garlic powder, and dried parsley and rub it on the meat. I also cut a few slits into the meat and add cloves of garlic which through cooking infuses into the meat. Then in the baking dish i'm cooking it in i add some water and a few beef bullion cubes(2 to 3 depending on the size of the roast). The water keeps the meat from drying out and with the added juices can be the base for a gravy.
For the gravy i use the juices and add a mixture of a coupole tablespoons of flour and a cup and half water...stir and add to juices. the flour helps to thicken the gravy. may have to add a little more salt and pepper to taste.

Onions and Garlic are my favorite standby, I like to marinade the roast overnight in Italian dressing.
Company Hash browns
1 bag frozen shredded hash browns
1 can cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 tsp salt
1/4 tsp pepper
3 tablespoons chopped onion
Mix all ingredients in a large glass bowl or cooking dish, top with 1 cup crushed corn flakes if desired. Cover. Cook at 375 for 1 1/2 hour or brown and bubbly and cooked through

i use a roasting bag to cook my roast in. i follow the direction adding the required all purpose flour and water. i first season the roast all over with cavendar's greek seasoning. i add in the bag first the flour, 1 package of lipton (any brand will do) dry onion dip mix, and the water then i add the roast to the bag. i then take the bag and try to get the flour/onion mixture all over the roast. do this while it is in the bag. then i add about 4 to 5 cut red potato's, 1 to 2 sliced large yellow onions, and 5 to 6 chopped carrots in the bag with the roast. try to get some of the flour/onion mixture on the vegetables. place the fatty side of the roast down in a pan lined with heavy duty aluminum foil. puncture holes in the top of the bag but not the side. you do not want the flour/onion mixture to drain out. go by the directions in the roasting bag box to cook your roast according to the wieght.

When I make a roast beef, I slow cook it on the stove top. I brown it in a teeny bit of oil, then I season it with onion soup mix, cream of mushroom soup and add a cup of water. Let it come to a boil and then let it simmer for about 2.5 hours. Then add baby carrots and cut potatoes. Let it cook for another hour and half to 2 hours. Yummy. I usually make green beans to go with it.

As a mother-to-be...I am sure you want an easy recipe...
Simply place roast in crockpot, add 1 pkg of Lipton Onion Soup, add a few of your favorite root vegetables (carrots, potatoes, turnips, etc) and fill crockpot to submerge all ingredients and cook on low (slow simmer) until meat falls apart. Take meat out. Combine a tsp of cornstarch with 1/4 c of cold water and mix into gravy in bottom of crockpot and turn on high until until it simmers for a few mins. Add salt/pepper to taste and pour over sliced meat and vegetables (your side dish/es).

Season the meat with salt ,pepper,lots of garlic powder worchestershire sauce.Brown meat on both sides, add water, Lipton onion soup mix and add cream of mushroom soup about an hour before it is done.Also add carrots and potatoes about an hour before it is done.I serve it with rice, green beans and cornbread or rolls.It sounds like a long time but let it cook for about 6 hours on simmer. Just add a little water when it starts to boil dry.

rub it with A-1 sauce &garlic ,place a few sprigs of fresh rosemary under roast @high temp. 1st (500') for 10 mins then turn down to (350') for rest of time,this sears the outside and keeps all juices inside. sidedish -classic yorkshire pudding of course(pop overs)

cook it in a roasting pan,use salt rub salt on both sides really good. them add a little water to the pam 1/4 cup. and cook it,baset it once in awhile. side dishies garden squash,mash potatoes and gravy.
