FREEZING CANTALOUPE OR MELONS
You have three options when freezing cantaloupe: freezing unsweetened or using either a sugar or syrup pack. As you might expect, frozen cantaloupe will have the best shape and texture if eaten while still frosty. If you freeze cantaloupe without additional sugar added, use it within a month.
1.- Selecting the fruit.
Cantaloupes should be selected as fully ripe fruit. This is accomplished by selecting fruit by its indication of full maturity, which are: a) stem seperation from the fruit; b)thick, coarse and corky netting or veining which stands out on the surface; and c) yellowish-buff, yellowish-gray, or pale yellow skin color between the netting.
A ripe cantaloupe will also have a pleasant cantaloupe odor when the stem scar is held under the nose. The stem scar will also yield slightly to light pressure.
Avoid cantaloupes that appear to be overripe. The indicators of overripeness are: a pronounced yellow rind color, softening over the entire rind, and soft, watery and insipid flesh.
2.- Freezing Cantaloupe
• Prepare a syrup solution of 2 cups of sugar to 4 cups of water (50% sugar solution) or 1 cup of sugar to 4 cups of water (25% sugar solution), depending upon how sweet the cantaloupe tastes and your preferences, or prepare one of your choice. Each pint of fruit will need approximately 1/2 to 2/3 cup of syrup to cover.
• Cut cantaloupe into slices, cubes, or balls:
Cut firm-ripe melons in half; remove seeds and soft tissues holding them. If for slices or cubes, cut off all rind; cut to shape. If for balls, do not cut off rind, but scoop with a baller, taking care not to include any rind.
• Pack in containers or freeze quickly on a tray then pack in containers.
• Fill containers with the syrup solution of your choice, leaving 1/2-inch headspace. Freeze

I freeze Cut-up cantelope(spell check ;)) along with fresh strawberries and banana's and watermelon. In the morning I add juice(whatever kind you like) and add a handfull of each of the frozen fruits and blend. Makes for an awesome drink in the morn. Or an after dinner cocktail mixed with vodka(or alcohol of your choice) Bottoms up! =))
