make your instant potatoes like directions say but just a little thicker than usual. to the potatoes add one egg, some flour and a touch of milk if needed, salt and pepper to taste. Mix all well(potatoes should be pretty stiff but not too stiff) and drop by spoonfuls into hot skillet sprayed with cooking spray or olive oil on a paper towel rubbed over skillet. cook on low heat until brown on each side and put cooked patties on paper towel lined plate. Simple and good. Maybe better with real potatoes, but still...

Mashed Potato Patties
INGREDIENTS:
1 recipe mashed potatoes
(see recipe below or use
left-over mashed potatoes)
1/2 cup self-rising flour
1/4 cup finely minced onion
1 egg, beaten
Bacon drippings, or vegetable oil
DIRECTIONS:
Allow mashed potatoes to cool. Stir
in flour, onion, and egg, mixing well.
Drop 1/4 cup of potato mixture at a
time into 1/8 inch hot oil in heavy
skillet; press into 3/4-inch-thick
rounds with the back of a spatula or
fork. Fry until golden brown, turning
once. Drain well.
*serve with sour cream or applesauce

for 15 minutes, or until tender. Pour
off water, leaving potatoes in saucepan;
return to heat and shake over heat briefly
to evaporate water. Remove from pan
(or not) and mash with a potato masher.
Add next four ingredients and mash well.

1 cup mashed potatoes
1 cup milk
1 tsp cloves and nutmeg
2 tsp cinnamon
1 cup cocoa
1 cup butter (the real stuff), softened
3 cups sugar
4 eggs, separated
3 cups flour
2 tsp baking powder
1 tsp vanilla
Mix butter and sugar; add egg yolks. Mix dry ingredients together. Alternately add milk and flour into sugar mixture. Add potatoes. Beat egg whites until stiff and fold in. Bake in 3 greased and floured layer cake pans at 350°F until toothpick inserted in middle comes out clean. Frost cooled layers with Fudge Frosting.
Fudge Frosting for Potato Cake:
1/2 cup butter
3 Tbsp cocoa
2 cups sugar
1/2 cup milk
Mix butter, sugar and cocoa in a saucepan. Add milk and bring to a boil. Boil 1 minute. Remove from heat and beat till frosting begins to thicken. Frost cake immediately.
