I agree with the V8 for convenience.

Keep a bag of carrots in the refridgerator to munch on for snacks.

Get a double-boiler and use that to cook potatoes or rice in the bottom, and steam vegetables in the basket.

Cut up assorted vegetables such as onions, celery, green peppers, and tomatoes. Add a little salt and pepper, garlic, oregano, and tarragon, and stir-fry. Eat that either as a side dish or mixed with pasta. Or add V8 or tomato juice and perhaps a jar of salsa, and a bit of olive oil for a very tasty cold soup.

man if you haven't been eating veggies for this long then thats too bad, they're really good and essential for good health. Most people I know who have bad eating habits have them because their parents have/had them and now its just habit. So the best thing to do is break your habit of not eating veggies. There are too many ways to list how to enjoy vegetables. Some of the best though are salads, soups, and stir fry. Raw vegetables are supposed to be the best for you because you don't cook out any of the nutrients but cooked is better than none. Enjoy

Juice is definitely easy.

Do you like pasta w/ marinara? Throw a few extra non-traditional veggies into the sauce (zucchini, carrots, eggplant, etc.) and effectively boil them in the sauce until they're soft, then puree it all together. If you have an immersion blender (the "stick" kind), that's *perfect* for such things.

V8 is a quick and easy way, i love it
you can buy prepared veggies in the produce section - baby carrots, celery sticks, broccoli... get some pimento cheese for dip and make a lunch of them

Oh there's so many ways. For snacks cut up celery sticks, baby carrots, green or yellow pepper slices, buy or make up a dip you like, have about half a cup.

Buy a vegetable or salad cook book and dream up combinations of different fruits and vegetables to serve at supper or lunch.

Put berries or fresh fruit into plain yogurt. Instant fruit yogurt and it won't cost as much as buying it at the store.

Add raisins, dried cranberries to stuffings, oatmeal, fruit salads , quick breads.

Drink V8 juice or fresh orange juice with calcium instead of pop or tea or coffee.

if making something like lasange , spag bol or shepards pie etc u can grate in vegetables. im picky as anything when it comes to food esp with texture but because i cant see its in there and theres no huge lumps of veg i can eat it. also good way to get the goodness of the vegs into my son. i cut mushrooms and onions up small. blend lumpy tomatoes. grate in carrots and courgettes. so all those veggies in the dish!

You can buy pre-cut veggies (carrots, celery, brocolli, etc.) raw at the grocery store and most times they come with dip. Easy as can be, and pretty tasty with the dip as well.
