Found this on allrecipes.com a few months ago and I make it ALLLL the time for potlocks and parties. Always a crowd pleaser!!!

1 pound dry Chinese noodles
1 cup chopped fresh mushrooms
1 (8 ounce) can bamboo shoots, drained
1 cup chopped celery
1 cup bean sprouts
1/2 teaspoon chopped garlic
1 teaspoon salt
1 cup vegetable broth
1 teaspoon white sugar
1 cup water
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon all-purpose flour

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add Chinese noodles and cook about 2 to 4 minutes; drain.
In a large skillet or wok over high heat with a small amount or oil, cook mushrooms, bamboo shoots, celery, bean sprouts and garlic. Mix in salt, broth, sugar, water, soy sauce and oyster sauce; stir. Add flour and cook until thickened. Pour over noodles and toss lightly.

You want to cook lo mein yourself huh? well, first you will need to buy some sauce such as hoy sin sauce or others which you like from some chinese supermarket, making the sauce by yourself will be too complicated, althoguh i know how to make a few. anyway, you then need to buy some egg noodles, spirng onions and a sieve if you don't already have one. go back home (watch out for the robbers) start up heating a pan of water about 800ml, and put your egg noodle into a big bowel submerged into water for at least 20 minutes, when the water is boiling in the pan, put the noodle into the pan without the water from the bowel. wait for 10 minutes, now use the sieve to catch the noodle while pouring the water out from the pan, turn on your cold water tap, and let the cold water run through the hot egg noodle. next put the cooled egg noodle in the microwave in a microwave safe bowl and re-heat it ( the re-heating method can be done by steaming which will make the noodle taste better, but microwave is quick and easy) now chop the spring onion into small pieces and then add the sauce into the noodle the stir, the meal is then ready to be served. you can add the veggies that you like some of them need to be cooked and some can be eaten straight away, a little bit of sesame oil, salt (if not salty enough) and sitr again, then ready for eating.

Vegetable Lo Mein

1 tablespoon soy sauce
2 tablespoons Chinese rice wine or dry sherry
2 teaspoons cornstarch
2 tablespoons oyster sauce
1/2 teaspoon sugar
1/2 pound fresh Chinese egg noodles, lo mein noodles
1 tablespoon sesame oil
4 tablespoons oil, divided
2 carrots, cut julienne
8 leaves Chinese cabbage, cut in crosswise shreds
1 small 4 ounce can sliced mushrooms, drained

Combine soy sauce and rice wine with oyster sauce and sugar.

Set aside. Bring a large pot of water to a boil. Add noodles, stirring to separate. Cook about 2 minutes, until al dente. Drain, rinse with cold water, and toss with sesame oil. Set aside.

Heat 1 tablespoon oil in a wok. Add carrots and stir fry 1 minute. Add shredded cabbage and mushrooms and stir fry 1 minute longer. Remove. Heat remaining 2 tablespoons oil in wok. Add noodles and stir fry until they are heated through. Stir in vegetables. Add sauce mixture and stir fry to mix well.

VEGETABLE LO MEIN:
6 ounces vermicelli, uncooked
1 teaspoon sesame oil
2 cloves of garlic, minced
5 cups chopped bok choy (a Chinese vegetable with a white stalk and dark green leaves)
1 cup low sodium fat free chicken broth
2 tablespoons low sodium soy sauce
1/2 teaspoon dried crushed red pepper
1/2 cup coarsely shredded carrot
1/4 cup chopped green onion
1/2 cup sliced mushrooms
1/2 cup baby corn
Additional low sodium soy sauce
Cook pasta according to package. Drain and set aside. Coat a wok or large nonstick skillet cooking spray and 1 teaspoon sesame oil. Heat at medium-high temp. (375 degrees) until hot.
Stir-fry garlic for 2 minutes. Add bok choy; stir-fry for 2 minutes. Add chicken broth, soy sauce and red pepper. Stir fry for 1 minute. Add carrots, green onions, mushrooms and baby corn. Stir-fry for approximately 2 minutes.
Add cooked pasta; toss gently. Sprinkle additional soy sauce (you can decide how much) over entire mixture; toss more. Serve and enjoy.

OR CHINESE BEEF LO-MEIN
2 pkgs. Chinese Chef instant egg noodles (beef flavor), 3 oz. pkgs.
1/2 bunch green onions (chopped) or 1 lg. onion or both
1/2 lb. ground lean beef (mixed with 4 tbsp. soy sauce and 2 tbsp. cornstarch)
1/2 lg. green bell pepper (chopped)
1/2 sm. cabbage (thin shred)
2 tbsp. vegetable oil

Heat oil in skillet. Add ground beef, onions and bell pepper. Stir. When 1/2 done, add cabbage. Cook 2 packages of noodles according to directions (only 3 minutes). Let set 1 minute. Pour over meat-cabbage mixture. Add seasonings from noodle package. Makes 3 servings.
P. S. Chicken or pork can be substituted for beef.
