1. Sautee a chopped onion in a little oil until wilted. Add a couple garlic cloves, saute about 1 min, and don't let it burn.
2. Add about 8 cups chicken stock.
3. Add 2 chopped and peeled potatoes.
4. Add a 8-12 oz. bag of frozen mixed veggies (or make you r own mix w/ corn, limas, carrots, green peans, green peas.)
5. Add a can of chopped tomatoes w/ juice.
6. Add a bag of cole slaw mix (cabbage and carrots). A bay leaf is also good tossed in at this point.
7. If you want to asdd pasta, boil separately and add at the last minute so they don't suck up all your liquid.
8. Simmer on med-low until veggies are tende, about 30-45 minutes, stirring occasioanlly.
9. Remove bay leaf; garnish w/ a handful of chopped fresh parsley before serving for fresh flavor and great color.

Crazy Vegetable Soup/Stew
Ingredients (use vegan versions):
6 cups water
1 cup dried veggie stock (look at the bulk section of your grocery store)
1 12 oz bag frozen misc. veggies
3 red chard stalks, chopped without leaves
2 carrots, peeled and chopped
1 clove garlic
2 to 4 small chopped broccoli quarters
1 tablespoon olive oil
pinch of salt
pinch of onion powder
pinch of basil
1/2 cup artichoke hearts (optional)
1 mango (optional)
Directions:
This recipe is crazy because any vegetable can be added. Here's how I did it:
In a large saucepan, bring 6 cups of water to a boil. Add veggie stock and frozen veggie medley. Simmer for about 5 minutes
While simmering, chop up carrots, chard, and mango. Add to frying pan with the olive oil; add garlic a moment later. Sauté for 2 to 3 minutes.
Add sautéed veggies to the soup, stir.
Add the pinches of spices.
Put lid on the soup and simmer for about 5 to 10 minutes.
I also added 1/2 cup brown rice.
Enjoy!
Serves: at least 5
Preparation time: 20 mins

Peel and chunk 3 or 4 potatoes,peel and dice up 2 or 3 carrots, dice 2 or 3 celery sticks, chop one medium onion, put in pot of water to just cover vegetables. Add 1 can of Ro-tel or your favorite can of stewed tomatoes. Add 1 small can of tomatoe sauce. Sprinkle about a quarter teaspoon of garlic powder or salt. Also a little salt and pepper and basil or thyme sprinkled in can give it a good flavor. Add more water if needed. Let boil, then simmer for about 45 minutes. Hope this gives you an idea, depending on what you like.

Vegetarian Vegetable Soup
Ingredients:
1 large onion, chopped
6 ribs celery, chopped
2 tbsp. vegetable oil
1 small head broccoli, cut into florets
1 small head cauliflower, cut in florets
3 large potatoes, peeled and cubed
3 large carrots, chopped
1 medium zucchini, diced
1 medium yellow squasyh, diced
1 turnip diced
1/2 head cabbage, shredded
1 parsnip, diced
1 small sweet potato, diced
1 20 oz. can diced tomatoes and juice
1/2 C frozen lima beans
1/2 C frozen green beans
1/2 C frozen corn
1/2 C frozen peas
2 quarts water
1/2 tsp. garlic flakes
1 tsp. dried basil
1/4 tsp. dried thyme
1 tsp. cumin powder
1 tsp. chili powder
1/4 tsp. cayenne pepper
1/4 tsp. oregano
1 tsp. parsley flakes
1 tbsp. honey
3 tbsp. soy sauce or tamari
Directions:
In a large kettle, saute the onin and celery in oil until the onions are translucent. Add vegetables and water. Add seasonings and bring to a boil. Reduce to a simmer and let
simmer for 2 hours or until vegetables are tender.
Makes 8-10 servings
