Raw coconut is very healthy for you. I am a raw vegan, meaning I eat only raw fruits and vegetables. I have been including mature coconuts and young thai coconuts in my diet for years.
The key is this, if you want coconut, then buy whole coconuts. Do not buy coconut cream or milk that comes in cans at your grocery store. That stuff has additives and it is not healthy.
You can easily make coconut cream at home. Coconut cream can be added to raw soup recipes or it can be used as a concentrate to make coconut milk (just by adding water). I have posted a link to a picture of my setup to make raw coconut cream.

Coconut is high in saturated fat. So if you are avoiding sat fats for health rasons, avoid coconut.
Coconut is, however, very high in fiber. So if you need fiber for whatever reason, more than usual, go for it.
