I want the end result to be as I would purchase a container of peppers in a grocery store.

From my own canning experience I know that you can wash and prune the tops of the peppers and pack them in jars. Add what spices you want(Check the Bought Jalapenos contents for the spice ingredients), heat white vinegar to almost boiling, heat seals and jar rings in boiling water to help them seal. After packing the jars with the peppers, pour the hot vinegar over the peppers and spices, wipe the top of jars with a cloth, put seals on, then rings. They should seal themselves. If you have trouble, tighten rings securely, and turn upside down on warm burner. This will almost insure seal.
