Quick Chicken Kebabs

2 chicken breasts
2 big onions
2 dried garlic
2 green chilies
4 pieces bread
1/2 cup breadcrumbs
1/2 teaspoon black pepper
salt (as required)
refined oil (for frying)

Put chicken, onions, garlic, chillies, black pepper powder and salt in the blender and run the same till mixture is totally smooth.
Add very little water if at all necessary.
Transfer the mixture to the bowl.
Add bread crumbs and the bread pieces (crush them thoroughly with wet hands).
Mix them well using your hands.
Heat the oil in a pan.
Fill almost 5 1/2 inches for frying.
Take out small scoops of mixture.
Make small balls and flatten them a little before putting in the oil.
Fry on medium heat on both the sides till well done.
Serve hot with your favourite salsa, mint chutney or sauce.

Best-Ever Grilled Chicken Kebabs

1 lemon
1/4-1/2 cup extra virgin olive oil
3 cloves garlic, minced or pressed
1 1/2 tablespoons dried oregano
1 tablespoon dried basil
1 pinch dried rosemary
1/2 teaspoon salt
1 lb chicken breasts, cut into 1 inch pieces
1 large onion, cut into sections
1/2 lb grape tomatoes (they look like small, pear shaped cherry tomatoes, but they are much better on the grill, and taste)
2 red peppers, cut into 1 inch pieces

Place chicken breast pieces in a bowl.
Pour in enough olive oil to completely cover pieces, squeeze the lemon over them, and then add the garlic, oregano, basil, rosemary, salt, and a couple of twists of cracked pepper.
Cover and refrigerate overnight.
Assemble kebabs, and grill until chicken is no longer pink, about 10-15 minutes depending on your grill.
Don't overcook them, though.

kebabs are awesome but they take a little time prepare. The night before you eat them cut fresh chicken breast into little 1-inch cubes. Place cubes in a Tupperware container and marinade over night. I would recommend Teriyaki, Italian dressing and soy sauce or honey Dijon marinade. In your case...plum sauce.

The next day put the well marinated chicken cubes on skewers alternating between vegi and chicken cubes. You can use apples, sweet peppers, cherry tomatoes or mushrooms...just as long as they are also cut into 1-inch pieces. Be careful not to bunch the pieces to close to one another or they won't get cooked.

Place the skewers on a hot grill and turn them over every few minutes until they’re cooked on all sides. Enjoy!

i would put them in a roasting tin and cook on medium heat, until chicken thourghly cooked, turning frequently. About 30-40 min on 180o just check its cooked well. if not give it a bit longer but should be done.
