When fighters escort a passenger plane it is not to help it. It is to gather info, force it to land, or shoot it down if required. There is nothing a fighter can do to help another plane larger than it.

When there's no threat of people firing from the ground, the purpose of the escort (as it happened just recently) is so that the fighter jets can shoot the plane down it's decided that the plane presents a threat to the ground. For example, if they find out that a passenger has sumggled a weapon on board and is threatening to hijack and crash the plane into a city target, the fighter jet would shoot it down so that the wreckage lands in an unpopulated area.
Yes, the people on the plane still die, but at least the terrorist didn;t get what they wanted and people on the ground don't get killed too.
The other reason would be that is a terrorist managed to hijack the plane and start flying it to some other destination, the fighter pilot could force it to land.
It's a last resort scenario.

Two ways: (1) If there are terrorists on board the plane, they can shoot the plane down before they can slam it into a building, or (2) If someone tries to shoot the plane down using a surface-to-air or heat seeking missile, the fighters can place themselves between the missile and the plane so the missile will lock on to them instead of the passenger plane, at which point they can deploy chaff or other countermeasures to "confuse" the missile and take evasive maneuvers.

Actually half the point of the escort is to protect the people from the passenger plane. If it acts funny they could either force it or shoot it down. As to firing rockets, those are missles and pack some power.
