You can use canned or soaked black beans for this. I use 2 cans black beans,but first I saute some onion,garlic, and peppers(any color) in olive oil. Also saute some polish sausage(however much you like). Add all together and add a can of crushed or diced tomatoes. Let come to a boil and then simmer while you cook some rice to go with it. Serve over rice. This is quick and good. I forgot,add seasonings,such as salt,pepper,red pepper flakes,cayenne,garlic powder,etc.,such as you would like.

BRAZILIAN BLACK BEANS
Pick over and rinse:
2 cups black beans
Drain the beans and transfer to a soup pot.
Add:
4 cups water
Bring to a boil, reduce the heat, and simmer, partially covered, stirring occasionally, for 1 1/2 hours. Meanwhile, bring a medium saucepan of water to a boil. Pierce in several places with a fork:
8 ounces hot Italian sausage (optional)
Add to the pot and boil until an instant-read thermometer inserted in the center of a sausage registers 160°F, about 45 minutes. Drain, rinse with cold water, and slice into 1/4-inch thick rounds. Set aside. Heat in a medium skillet over medium-low heat:
1/4 cup olive oil
Add:
1 onion, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
Cook until the vegetables are tender but not brown, 7 to 10 minutes.
Add:
1 teaspoon ground cumin
3/4 teaspoon red pepper flakes
3/4 teaspoon ground cardamom
Stir and cook for 1 minute, remove from the heat, and add to the beans after they have cooked for 1 1/2 hours. Cook until the beans are very tender, about 30 minutes more.
Add:
3/4 cup orange juice
1/4 cup dry sherry
1 to 2 teaspoons salt, or to taste
Cook for 15 minutes more, or longer if desired.
Garnish with:
Sour cream
Serves 6.

Here's a recipe for black beans and yellow rice that sounds pretty good:
1 tablespoon vegetable oil
1 teaspoon butter
1/2 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green pepper
1 can (15 ounces) black beans, drained
1 can (14.5 ounces) diced tomatoes with juice
1 teaspoon sugar
1/2 teaspoon dried leaf oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon hot sauce
1/2 cup long grain white rice, uncooked
1/4 teaspoon ground turmeric
PREPARATION:
Heat vegetable oil and butter in a medium saucepan over medium heat. Add onion, celery and green pepper; cook, stirring constantly, until tender.
Stir in drained beans, tomatoes, sugar, oregano, basil, garlic powder, pepper, salt, and hot sauce; bring to a boil.
Reduce heat, and simmer, uncovered, 15 minutes or until thickened, stirring frequently; set aside.
Cook rice, following package directions, with the addition of turmeric to the cooking liquid.
Serve hot black bean mixture over rice.
Serves 2.

1 quart cold water
6 cloves garlic, minced
2 bell peppers, sliced thin
2 large onions, minced
1/4 cup olive oil
2 bay leaves
2 teaspoons salt
1 tablespoon vinegar
1 tablespoon sugar
cooked white rice
PREPARATION:
Soak beans overnight. Rinse well. Put beans in a large kettle or Dutch oven; cover with cold water and boil 1 hour. Add bell pepper, onions, oil, and bay leaves. Cook slowly for about 4 hours or until beans are tender and begin to thicken.Add salt, vinegar, and sugar just before serving.
Best if cooked a day ahead. Serve on rice with smoked pork, ham or sausage.
