Just about anything you can think of. Some have a wider range than others, some colleges have more of a focus in one direction (arts vs math, for example) than others.
Pick a college you think you might be interested in, see if they have a website, and browse the course offerings - many have their catalogues online.
www.suny.edu - this is the main listing for the State University of New York schools and the classes they offer.
