White collar shirt and ties are worn in the office of businesses and professionals. Blue collar denim shirts were most often worn by workers doing manual labor. Both have shown some shift with casual office dress and t-shirts in the field, but the office—laborer connotation lives on.

Literally from the clothes that they wear.
Office workers, before business casual attire wore white collar shirts with a tie and jacket.
Blue collar workers generally wore blue uniforms.
It came to be generalized that Office workers who sit behind a desk are white collar workers.
Blue collar workers do physical labor, a trade,, work in factories, etc.

collars used to be detachable , working in an office you could wear a white collar , in blue collar occupations you wore overalls or a blue serge shirt, white would get too dirty
