The tiny pits in the Mentos create millions of nucleation sites for the bubbles inside the soda to collect and release carbon dioxide. All this C02 is getting released at one time and there's onlt one place for it to go, through the only opening, the top of the bottle. If you try this with plain seltzer water, you will get a diminished reaction - the other ingredients in the diet soda (aspartame, etc) increase the effects of this grealty.
