Brown Sauce....A1
I don't like to use sauce on my Steaks if it cooked right and has been marinated. My favorited restaurant serves Cherry sauce with the Shrimp.

On bacon, it has to be brown sauce, but my fave would be the lea and perrins worcestershire red sauce, not the old fashioned one that is dark brown, but the ketchup (which to me is a mix between brown and red sauce - scrummy)

Well, if this is one of those "you can only have ONE of these for the rest of your life" hypothetical questions, I think I would choose brown sauce. HP please.
But if I am allowed to add a bit extra to the hypothetical choice - I'd like to bypass both brown and red sauces and ask for Hellaman's Mayonnaise forever, please. Especially on chips.

A mixture of both on a bacon butty.
Brown sauce on cheese sarnies.
Red sauce on burgers and hot dogs.

No for me home made cheese sauce, poured over cauliflower is the best:
11/2 teaspoons of cornflour;
Large knob of butter;
1 tsp English mustard;
1/2 pint of milk;
4 ozs of mature cheddar/ or own choice of cheese
not processed or creamed;
Ground pepper corns;
Pinch of sea salt to taste.
1 cooked cauliflower cut into large portions.. strain cauliflower after cooking and place in oven proof dish.
Put non stick pan on low heat and add butter, gradually stir in cornflour to butter making sure it does not go lumpy (if it does add a little of the milk and stir using a wooden spoon). Add mustard, salt, pepper and milk, stirring all the time. When you have a lump free consistency add cheese and turn up heat under pan. Stir until mixture is bubbling and thick. Taste and add more cheese, and seasoning if required. Pour mixture over cauliflower, garnish with sliced tomato and put in medium oven for 20 minutes or until top is golden brown (taking care not to burn the sauce).
Delicious as a snack on it's own or with roast beef, roast potatoes, carrots, peas, gravy and of course Yorkshire pudding. Wonderful.
