Are you referring to Taiwan-based China Airlines or the air carriers from communist China?

If it's former, could be your feeling because Taipei-Hong Kong is the most "intense" international flight because you got average 250-400 passengers to serve a typical international service (ie: duty free, full meal, and other misc.) within 90-100 minutes.

Put yourself in their shoe and try to imagine you doing all required task within 90-100 minutes, you think you might be able to manage a smile?

Otherwise China Airlines is one of the carrier known for friendly crews, with the improvement of reputation since serious of crash in the 90s.

But if you're referring to latter that flies between HK and mainland china, yes, it's easily to get different types of crews, some can be friendly but some just totally insane.

I flew between Beijing and Hainan Island and the flight was so full that they certainly didn't bother smiling. Maybe that's their way of showing that they are professional...it may be something as simple as a cultural thing.
