Curried Monkfish

1 tablespoon canola oil
1 tablespoon onions, chopped
2 cloves garlic, minced
1 1/2 lbs monk fish, tail or other sturdy fish, such as haddock,cut into 1 1/2 inch chunks
1 tablespoon curry powder
1 cup chopped tomatoes (fresh or canned)
1 cup nonfat plain yogurt

Heat oil in a skillet over medium heat.
Add onion and cook until they begin to soften, about 5 minutes.
Add Garlic and cook for 1 minute.
Add fish pieces to the skillet and season with a little salt and pepper.
Cook, stirring, until the fish pieces lose thier translucency, about 3 minutes.
Stir in curry powder followed by the tomatoes.
Cook until bubbling hot.
Reduce the heat and stir in the yogurt.

This is my favorite, and it really does taste like lobster!!


Poor Man's Lobster

1 pound frozen monkfish, cut in large pieces
2 cups water
1 tablespoon white vinegar
1 teaspoon salt
1 teaspoon seafood seasoning such as Old Bay

Add salt, seafood seasoning and vinegar to water and bring to a boil. Add
frozen fish; simmer 15-20 minutes. Drain and serve with melted butter.

Butterfly the tail fillet, stuff with garlic, thyme, lemon zest and chopped onion and roll it up like a swiss roll. Tie it up with string, drizzle with olive oil and roast until cooked. Yum.

Brush with butter and a little garlic broil 5 min on each side if 1" thick

Tastes a little like lobster.

Wrap in parma ham (or other smoked ham) with a sprig of rosemary, salt and pepper; parcel it in foil and bake it in the oven for about 20 mins, if it's just a tail.

cut into small pieces, saute in butter, flamb'e in brandy, pour in cream heat but do not boil, take off heat and mix in a raw egg yolk
yummy yum yum.
you can also cut into small pieces and batter and deap fry as is is supposed to be mock scampi.
