Carbon dioxide is not produced or given out as such. The carbon in the decaying organic matter is transformed from one molecule into the other.
For example Wood - cellulose - said to be made up of Carbon, Hydrogen and Oxygen viz C6 H12 O6. The breakdown of the decomposition process gives Carbon dioxide and water.
