1)Vanilla Ice Cream:Chef: Niru Gupta
Ingredients: 2 1/2 cups full cream milk
1 tbsp custard powder
1 cup sugar
2 tsp Vanilla essence
1 1/2 cup cream
cherries or nuts for garnish
Method: Mix the custard and sugar in half a cup of the milk. Heat the rest of the milk and when it comes to a boil, add the custard mixture, and bring to a boil again, stirring continuously.
When it boils, lower the heat and simmer for a half a minute, shut off the heat and leave to cool.
When it reaches room temperature, mix in the cream and vanilla essence and transfer on to a container with a tight lid.
Freeze till almost set take out and whip up in a blender and place back into the freezer in the same container. The lid should always be tightly shut, as this avoids crystals from forming.
Blend once more when almost set and place back in the freezer. You can adjust the cooling to normal about two hours after the last blending.
Serve garnished with the cherries or nuts.
2)Chef: Jennifer Furtado
Ingredients: 2 Large mangoes
1 medium sized muskmelon
2-3 tsps sugar (depending upon the sweetness)
1 1/4 vanilla essence
1 cups black current raisons
1 family pack of plain vanilla ice cream
Serves: full family ( approx.8 persons)
Method: Crush mangoes & mask melon together in a a bowl , add sugar & kept them to get set wih their flavour for 10 mins as a marinating substancs . Then add black currents chopped finely like small granules , apart from this at last mix them with Family pack vanilla ice cream & just sprinkle vanilla essenc on top
P.S: Its a very delicious time saving dessert to enjoy at summer time

Vanilla Icecream with Chocolate Sauce.
Ingredients:
For Ice Cream:
1 1/2 cup cold milk
3/4 tin condensed milk
1 1/2 cup cream
1 tsp vanilla essence
For Chocolate Sauce:
1/4 tin condensed milk
1/2 cup milk
3 tbsp cocoa
50g unsalted butter
Vanilla Icecream With Chocolate Sauce
Method:
Ice Cream:
Combine condensed milk, milk and vanilla essence in a bowl.
Whip up the cream lightly and fold into the above mixture
Pour the mixture into a freezing tray and freeze till the mixture is half set.
Remove from freezer and beat until smooth.
Return to tray and freeze until firm.
Chocolate Sauce:
Combine milk and cocoa and stir to paste.
Add condensed milk and unsalted butter. Heat over medium flame till thick enough and glossy.
Serve ice cream with hot chocolate sauce.
Serves: 5-6
Preparation time: 25-30 minutes + Freezing time

Homemade Ice Cream Vanilla Ice Cream Recipe
Custard base recipe
Ingredients:
4 egg yolks,
1/2 pint (250ml) milk,
1/2 pint (250ml) double/heavy cream,
4 oz (100g) sugar or caster sugar,
2 teaspoons vanilla extract (or according to taste - everyone's different!)
First of all scald the milk (bring slowly up to boiling point in a saucepan). Separately, mix together the egg yolks and sugar until thick. Pour into this the hot milk, whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool.
This is the custard base and one you can use in many other recipes.
When the custard base is cold, stir in the cream and vanilla extract, then transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.

Vanilla Ice Cream
Makes 1 1/2 quarts
Serves 8
6 Ingredients:
2 vanilla beans, split lengthwise and scraped
2 cups milk, chilled
6 large egg yolks
3/4 cup plus 2 tablespoons sugar
2 cups heavy cream
1 teaspoon pure vanilla extract
Step 1
In a medium saucepan over medium heat, combine the vanilla beans and scrapings with the milk. Bring to a gentle boil. Remove from heat, and let steep, covered, 30 minutes.
Step 2
Prepare an ice bath; set aside. In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks and sugar on medium-high speed until thick and pale, about 4 minutes.
step 3
Place milk mixture over medium-high heat; bring just to a simmer. Slowly pour about 1/4 cup hot-milk mixture into egg-yolk mixture, beating on low speed until blended. Continue adding milk, about 1/2 cup at a time, beating until incorporated after each addition.
Step 4
Return mixture to saucepan; stir with a wooden spoon over low heat until mixture is thick enough to coat back of spoon, 3 to 5 minutes. Custard should retain a line drawn across the back of the spoon with your fingertip.
Step 5
Remove pan from heat; stir in chilled cream to stop cooking. Pour custard through a fine sieve into a medium bowl set in ice bath; let stand, stirring occasionally, until chilled. Stir in extract. Freeze in an ice-cream maker according to manufacturer's instructions.
