The people telling you to drink Leffe or Celis are wrong -- those are fine, fine beers, and they are made with wheat, but they are not hefeweizen.
Ayinger hefeweizen is superb, and in fact Ayinger's Jahr beer is one of my favorites. But for hefeweizens I would have to tip my hat to the Hacker-Pschorr hefeweizen. It has just a touch more of the clove aroma that a hefeweizen should have.

I agree with the previous two people. Ayinger and Paulaner - for what you can get in the US. Pyramid and Widmer don't even hold a candle to them. And when you try different hefs, remember that real Hef is NEVER served with fruit.
Spaten also produces a good hef type beer called Fransikaner. My local Trader Joe's carries it regularly.
When I get a craving but I don't want to plunk down the cash for the above beers, the Gordon Biersch/Trader Joe's Hef is also surprisingly good.

In Texas you can find Celis made by the Belgian brewer that started brewing Hoegaerden White Beer in Belgium.
If you like to drink beer, you must come to Belgium. The biggest variety of beer in the world (and I mean types of beer not brands).

witte van hoegaarden, steendonck, dentergemse, blanch de namur, etc. are all wheat beers in belgium. They al have a whitish color wich gives the name at the beer. In germany some the beer is put tro a filter whit result that the beer is more transparant but the name of whith beer remans.
They are very refreshing in summer and have a slight tast of fruit.
I perfer the witte van hoegaarden

The finest (according to tasting panels in Bavaria, where Hefe-weizen was created) is "Ayinger" (Brau von Aying).
They make two examples: the typical light colored beer and a dunkel (dark) beer as well.
The beers are imported by Merchant du Vin out of Seattle, WA and should be available in most major market areas.
Ask your favorite package store if they have access to it and special order it.
