I'd like to give my ancestors food, but then what do i do with it after they've eated the spirit of the food? Is it really okay to just put it in the bin, that seems so disrespectful. Please help.

If its the Taoist tradition you are refering to... then after you offer the "banquet" it is ok to take some back for consumption while leaving a small portion for the ancestor. It's like having a reunion meal with the lineage holders of your family's bloodline.
Many people say, after offering the food, the food seems lacking in taste, and its believed the flavor and taste has been "extracted" from it. So if you are uncomfortable about consuming it, feed it to the animals or return it to the earth respectfully.
This practice is a Ancient Chinese Cultural practice for "all souls day" or Cheng Meng. For those who just spray the My God is Greater than your God attitude at the cultural practices of others, please consider this... How would YOU feel if someone trampled all over your cultural practices that teaches gratitude, rememberence of family values and filial piety? OR even remembering the fore fathers of America ( if american ) like Thanksgiving Day... which i feel is such a wonderful holiday to instill in people the value of gratitude and thanksgiving. If you feel upset, sad or offended then don't do to other what you dont want others to do to you.
Disrespect and Intolerance is whats causing so much global suffering, many point fingers at this sect or that group but wickedness starts from the individual... if God were to allow such people in heaven... why would anyone want to enter a heaven full of disrespectful and intolerant people, apart from people of the same wavelength

In Tamilnadu, India, we give the food to a cow. I hope the food is vegetarian.

we usually place it outside for the birds. we belive that ancestors come in the form of crows and eat the food.

Eat the food and if you cannot finish all of them do not waste, give it to charity or feed the dogs with them

Accordingly, I rely totally on Your word Lord. Create in me a clean heart and restore to me, the joy of Your salvation. Save and justify me by Your divine grace because it is by Your grace that we are saved through faith and not from ourselves, and it is a gift from You alone. Thank You Father for redeeming me with Your most precious blood which You shed for me on the cross of Calvary. I thank You a million times Father, for transforming my life according to Your Word that "if anyone be in Christ, he is a new creation, the old has gone, the new has come!" I thank You and praise You Lord.
