Are they more like the behind closed doors with paperwork and such?

I would recommend just coming in as a 31B (MP). Seeing how they are short on 31E they are sticking MPs in those slots. This way you will be trained in both fields....

I was in when the MOS was called 95C..... You go to the same basic training as MP's, just a different A.I.T. There are only a hand full of places you could be stationed at as a 31E and you will be working with inmates.... you could say garrison. If you went 31B you could not even do any police work but be out in the field. It depends where you are stationed at. It all depends on what you want to do in the Army.... I enjoyed being a 31E I got out in 04 and do the same thing now, I just get paid a lot more.
