If you go to a classical music performance, read the program notes. Depending on which orchestra it is, the program notes may be relatively advanced or pretty straightforward. Also, for a lot of orchestras, one hour before the concert there is often a pre-concert discussion about what you are going to be hearing and you can learn a lot during that. There are also many books you can buy or get from the library that are good introductions to classical music.
The same is true for opera or ballet - make sure you read the program notes. Also, most performing arts organizations have an education component. Call the office and find out if they have anything for your age group (adult, college, youth, etc.). They want people to learn more about the particular art form, and should be more than happy to help you or point you to resources.
(One note - if you go to the symphony, do not clap between movements! Wait for the conductor to turn around and face the audience before you start to clap. I had to make this public service announcement!)
For classical music, check out the websites for the major orchestras - Boston Symphony, Los Angeles Philharmonic, Cleveland Orchestra, New York Phil, Chicago Symphony, Philadelphia Orchestra. They have a lot of great information on their websites. Also, you can learn a lot about classical music simply by listening to classical radio. When you hear something you like, jot down the name of the work and the composer. You may discover that you keep liking pieces by the same composer and voila! You are a Brahms fan, etc.
You can also look at the website for the American Symphony Orchestra League (ASOL) and subscribe to their magazine. There is also Dance magazine, or periodicals about Opera, so again, depending on what you are mostly interested in, you can subscribe to a magazine to learn more.
