I'm a diabetic looking for different vegetables to eat and different vegetable recipes to cook. I'm tired of the same old things all the time. I tried Butternut Squash for the first time today and I really like it, but I can't keep making it the way I did. I baked it til it was tender then put butter and honey over it and then added cinnamon. Even plain it didn't taste bad, kind of like a sweet potato. But I am curious whether I should count it as a starch like white potatoes or bread or corn and peas. Thanks.

Squash has a good amount of fiber but also rich in vitamins plus complex carbohydrates. Check with a nutritionist about the grams of carbs and the exchange value.

As to compare to bread, RAW (one cup mashed) butternut squash has 18 grams of carbohydrates (starch is a form of carbs) whereas one slice of bread has from about 12-15, depending upon the type bread. I think, however, because it is a vegetable, it would be very beneficial to your diabetic diet.

butternut and sweet potato soup Ingredients: 1 Large onion 500 grammes Butternut squash 500 grammes sweet potato 1 litre vegetable stock 1 tsp corriander seed 1 tsp fennel seed 1 tsp caraway seed 1/2 tsp salt 3 black pepper corns Large bunch corriander leaf 1/4 tsp crushed dried chillie 200ml double cream Directions: Finely chop the onion and fry in a large pan until translucent. Peel and chop the squash and sweet potato, add to the onion and fry for 5 minutes. Pour the vegetable stock into the pan, top up with water to cover the vegetables, and simmer until the squash and potato are soft. Put the salt, pepper corns, caraway seeds, fennel seeds and corriander seeds into a pestle and mortar and grind into a fine powder. Add the powder to the liquid along with the chopped corriander leaf and dried chillie. Pour the liquid into a blender and blend until smooth. Return the liquid to the pan and add the cream. This is a rich, filling soup ideal for cold winter days.

Why not top it with butter, cinnamon and splenda or the sweet and low brown sugar? As long as you do not heat the sweet and low brown sugar it isn't bad. You can do this but you have to do some modifications.
