Try my recipe for stuffed peppers. It's the easiest thing in the world and so tasty! 4 green peppers 1 lb. lean ground beef 1 egg 1 packet Minute Rice (cooked and brought to room temperature) 3 potatoes, cubed 3 cans Campbell's tomato soup (do not add water) Mix the beef, rice and egg in a bowl with your hands. Cut the tops off the peppers and scoop out any seeds. Fill with beef mixture. Put in a large pot with the potatoes on the side. Cover with the soup and cook for about an hour and a half to two hours if you want the peppers very soft. It's delicious!

I am a bad cook...these are really easy.
Cheese Quesadillas (sp)
shredded cheese
tortilla shells
salsa
sour cream
Add cheese to half of a tortilla shell and fold it over.
Toast it once or twice in a toaster oven.
Remove, cut into triangles, and top w/ salsa & sour cream.
Dump dip
1 jar salsa
1 can corn
2 cans black beans
1 bad lime flavored Tostidos
Dump the first 3 things in a bowl and mix.
Serve w/ chips.

Try homemade pizza's. They sell small pizza crusts and pizza cheese at the supermarket. You can add what ever you want. My son puts Perdue bourbon chicken on top instead of sauce.
Or
Dark chicken pieces, cream of chicken soup with milk instead of water in an oven dish. Let it cook in a 425 degree oven for about 45 minutes. Serve with rice.

Throw a few pieces of uncooked chicken breast in a crock pot and use a can of mushroom soup......Let it cook on high for like 3 to 4 hrs. It sounds bad but is actually really good.
