The yolks in hard boiled eggs will turn mud green if they take a long time to cool down. If you hard boil eggs, plunge them into cold water after you have boiled them (15 min for hard boiled) and cool them quickly. It has something to do with sulfur.

'Cause someone put green food coloring in them. Usually on St. Patrick's Day - Like the same goes for green beer.

Or, they are humoring their kid who just read that Dr. Suess book about green eggs & ham.

i've never heard of green eggs. i've seen and eaten brown eggs, but never green. the only green eggs i know of are the ones from the movie "Alien" w/ Sigourney Weaver.
