Make Hobo Dinners

In thick pieces of tin foil, make seperate packets. Place your hamburger patties in the tin foil, on top of the hamburg place some sliced potatoes, onion and some sliced up carrots or the baby carrots. Sprinkle with salt and pepper and put about 2 tbsp of worcheshire sauce over them. Close the packets up by pulling the sides up and just scrunching them together. This will let the steam out while they cook. Bake them at 350 degrees for about 45 -50 mins. Then eat, they are really tasty and the cleanup is really easy. We like to eat them out of the pockets. Also we like to make these when we are camping, we just throw them in the campfire to cook.

Here is one we called Fat and Sassy:

Use 2 hamburger patties 1 table spoon of chopped bell pepper and 1 table spoon of chopped onions and about 1 1/2 ounces of shredded Swiss or mozzarella cheese.

To Prepare

Saute onions and peppers until soft cool enough to handle

Place sauteed vegetable in center of the first pattie top with cheese.

Place 2nd pattie on top press the outer edges together to form one large pattie.

Bake or broil until meat is cooked and cheese is melted on the inside.

Yankee Cheddar Enchilada Casserole

2 tablespoons corn oil
2 onions -- chopped
2 cloves garlic -- chopped
2 pounds lean ground beef
2 1/2 cups tomatoes, peeled and chopped
2 dried hot red chili peppers, seeded and chopped
1 dozen tortillas
oil for frying
2 cups half and half
6 beef bouillon cubes
8 ounces shredded sharp cheddar cheese

Heat the corn oil and cook the chopped onions and garlic gently until soft, about 2 - 3 minutes. Stir in the ground beef and cook until it changes color, breaking it up with a fork. Add the tomatoes and crush with a spoon to mix with the meat, then add the chopped red peppers.
While the meat and tomato mixture is simmering, separate the tortillas and heat about 1" of oil in as large a skillet as you have and fry the tortillas, turning them over when they bulge. When they have cooked about 1 minute, remove the tortillas and drain on paper towels.
Heat the half and half to the simmering point and dissolve the beef cubes in it. Dip each tortilla in the hot milk and let it cook there for about 30 seconds.
Place 1 tortilla, folded, in a shallow baking dish, lift the top half, and fill with 2 - 3 tablespoons of the meat mixture, then cover with the top half of the tortilla. Repeat, arranging the folded tortillas snugly next to each other so they fill the dish. Spoon any leftover meat mixture on top of the tortillas, then cover with the grated cheese.
Bake in a preheated 350° oven for about 30 minutes, until the cheese bubbles.

My Dad's sloppy joes: chop up patties, put in fry pan with about 1/4 portion of the paties diced pepper, onion, and mushrooms. Add scrambled egg to the mix (use your judgement about how much egg. For two patties we'd use between 4-6 eggs. cook entire mixture until done. Put on toast. Bring ketchup, chili sauce, or whatever you like. Great late night snack.
