Pinconning -- it's an aged Colby-type cheese from Michigan. Pinconning has more character than the average Colby and a slightly stronger flavor. It's great for cheese platters, sandwiches, cooking, or just eating out of hand, preferably with a nice crisp apple.

It doesn't melt very well, however, so I don't use it for cooking.

This question gets asked over and over. There is a chemical in cheese that affects seritonin in women so that is why they are obsessed with cheese. Same as chocolate. American cheese is overtly bad when compared to european. I guess it comes down to hundreds of years of practice. Maybe not as they brought it here??? American cheese is just not worth the money.

German Butterkaese.... it is light colored, soft cheese that melt in your mouth and on your food, but is not bitter the way mozzarella is...
Also
Camembert...yes with the coating. That is actually a friendly culture growing on it and it does give you a boost of immunity. After all...what bacteria would grows on top of fungi?
Or a farmers cheese in a spreadable consistency that has some herbs in it....delicious!

I don't have just one favorite cheese. It depends on what I'm eating. Swiss and sharp cheddar are awesome, especially when eaten with a nice, juicy apple, and Monterey Jack is good on grilled cheese sandwiches and quesadillas. Feta is my favorite cheese in omelettes.

Muenster cheese on sandwiches, love the mild taste
Pinconning or colby on crackers
Neufchatel cheese on a bagel, it tastes better than cream cheese, but less calories

Blue cheese, the spreadable type on ritz crackers, for some reason I just love the strong taste that most people seem to repel.
