use 1/3 cup of mayo for every egg in the recipe, the egg is just a "binder" and mayo is made from eggs. i have had to do this many times myself, and always turned out good

add more breadcrumbs to the meat and seasoning mixture, roll into meatballs, cook in a little oil. then remove meat balls, add about a tablespoon of flour to the pan, additional oil if needed (1 tablespoon tops), cook the flour for a few seconds, then add some cool chicken broth and mix into the flour until slightly thick but no lumps. Add the meatballs back until completely cooked and coated. DONE!

Egg is a binder. You can use crumbled crackers, stale bread soaked in milk, seasoned bread crumbs, or cooked rice to accomplish the same thing and also to serve as an extender.

INSTEAD OF USING EGG JUST USE SOME BREADCRUMBS AS A BINDER INSTEAD. IF YOU LIKE MORE FLAVOR, USE ITALIAN BREADCRUMBS. IT'S GREAT!
