Pineapple Upside-Down Cake.
You will need:
Yellow cake mix.
Apple Sauce (with cinamon).
Eggs.
Canned Pineapple Slices (in natural juice).
Canned Peach Slices (in natural juice).
Marascino Cherries.
Butter.
Brown Sugar.
Prepare the pans, you will need two 9" round pans, or three 8" round pans.
Grease the pans all over with butter.
Lightly pack the bottom of the pan with brown sugar, about 1/8" deep.
Drain the pineapple and peaches - save the liquid.
Arrange the pineapple and peaches in the pan. Be creative, but fill the bottom of the pan with fruit. Place a marachino cherry inside each pineapple ring.I usually place the pineapples in a pattern like this:

and then fill in between them with peaches.
Prepare the cake mix, per the instructions on the box. Usually they will have low fat directions which telkl you to replace the oil with apple sauce. Do this. Also, instead of water use a mix of about 1/2 water and 1/2 juices from the fruit.
Pour the cake mix into the pans and bake according to the directions on the box. Once you remove the cakes from the oven, let them cool for about 5 minutes or so, not much longer. Then place a plate over the cake so you can flip it. Leave the cake in the pan for another 10 minutes or so and then remove the pans and allow the cakes to cool the rest of the way.
This looks really special, and hard, but is very easy. I make these camping in dutch ovens regularly and make them at home as well. They are always a big hit.

Peach pudding. Made with a box of peach jello with 1/2 cup boiling water to dissolve jello and 1 1/2 cups cold milk. Add this to one box instant vanilla pudding mixed with 2 cups cold milk and mix the two together. If you do all the mixing with two large bowls - (except the 1st hot water mix) one inside the other with ice separating the two bowls, everything will mostly set while mixing and refridgerator time becomes very short till serving. Ouick, easy, cheap, yummy dessert.

Cherry Enchiladas

"Cherry Pie like you've never had it before! Cherry pie filling wrapped in flour tortillas, soaked overnight in a sweet liquid, then baked. I used to work at a bed and breakfast, and we would make this sometimes for catered luncheons. I added my own touch with the almonds."
INGREDIENTS:
1/2 cup water
1/2 cup butter
1/2 cup white sugar
5 (10 inch) flour tortillas
1 (21 ounce) can cherry pie filling
2 tablespoons white sugar
1/2 teaspoon ground cinnamon
1 tablespoon crushed sliced
almonds
DIRECTIONS:
1. Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.
2. Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.
3. Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving.

Lime Cream Pie
Another 5-minute miracle from Eagle Brand. The perfect refreshing summer dessert to keep you out of the kitchen !
prep time: 5 minutes plus chilling time
servings: 6-8
INGREDIENTS
* 1 can (300 mL) Regular or Low Fat Eagle Brand®
* 1⁄2 cup (125 mL) lime juice
* Green food colouring, optional
* 1 cup (250 mL) whipping cream, whipped
* 1 9-inch (23 cm) graham cracker crumb pie crust, prepared
INSTRUCTIONS
* Combine Eagle Brand, lime juice and food colouring if desired. Fold in whipped cream. Pour into prepared crust.
* Chill 3 hours or until set. Garnish as desired
Lemon Cream Pie: Substitute 1/2 cup (125 mL) lemon juice for the lime juice and yellow food colouring, if using, for green.

Bananas cooked in a frying pan with butter, brown sugar, rum, a pinch of cinnamon, until the bananas are soft and the sauce starts to thicken (Caramelize). Serve over Vanilla Ice Cream and eat immediately.

Ambrosia.
1/2 jar each of green, red & plain palm kernels(drained & rinsed)
1/2 jar of coconut jell cubes(drained)
1/2 packet young coconut meat (defrosted & drained)
1 small can of fruit cocktail (in juice NOT syrup) drained & rinsed
1/4 lb softened cream cheese
1/2 can of sweetened condensed milk
Mix all ingredients together lightly, ensuring that all cream cheese chunks have been broken up. Cover & refrigerate for about 1-2 hours, serve.

One recipe of tempura batter
2 ripe bananas
Ice-cream
Whipped Cream
Chocolate/ Caramel sauce
Dip the whole banana in the batter and fry until golden brown.
Immediately place on serving place add scoops of ice-cream, whip
cream, and sauce of your choice. Simple and great!

Banoffee pie is soooooooooo easy to make and tastes yummy.
Fresh fruit salad is also good especially when served with lashings of double cream.
Trifle, proffiter rolls, Cheesecake, apple strudle, bananas and custard, jelly and ice-cream........ oh stop me now please.. I have gained 10lbs just writing this down :(
