cucumber sandwiches..really easy...cut the crust off the bread, spread whipped cream cheese and put cut up cucumber slices on it and cut into triangles(quarters) they taste really good.

Sausage Cheese Balls
1-1/2 cups Biscuit Mix
1 pound bulk turkey sausage
3 or 4 cups of shredded cheese
Get out a big bowl. Measure the Biscuit Mix and cheese into the bowl. Add the raw sausage. Use your hands to mix everything together like meatloaf.
It is sort of gooey, but the finished product is worth a little goo. Shape the mixture into small balls the size of walnuts or egg yolks. Place them on a cookie sheet and bake at 350° for 25 minutes.
Remove them from the oven and drain them on paper towels. These are best when they are still warm, but are still rather tasty cold. Makes about 75.

Soup
1-1/4 cups dry lentils
8 cups water (2 quarts)
4 carrots, peeled and sliced
3 or 4 celery stalks, peeled and sliced
1 large onion, peeled and sliced
4 bouillon cubes or 1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
Dumplings
2 tablespoons vegetable oil
1 egg or 3 tablespoons more milk (see note below)
1/2 cup milk
1-1/2 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon each salt & sugar
Begin by making the soup. Rinse the lentils under running water. Then place them in a large pot and cover them with 2-quarts of water. Bring the mixture to a boil and allow it to simmer over medium heat for about 20 minutes. The lentils will be almost tender. Add the vegetables, bouillon, garlic and black pepper. Stir gently and allow the mixture to simmer for 20 minutes more. The vegetables and lentils will both be tender. Taste and add salt if you think it needs it.
Now look over the amount of liquid in the pot. Add enough extra water so that all of the solids are well coverd with liquid. They don't need to be swimming over their heads, but they should be wading up to their waists. Bring the mixture to a slow lazy simmer, not a boil. If the soup boils it will disintergrate the dumplings instead of cooking them up into fluffy, glimmering jewels.
While the soup is simmering, prepare your dumplings. Get out a big bowl. In it combine the oil, egg and milk until they are well blended. Add the flour, baking powder, salt and sugar. Mix it up to a stiff batter, like for drop biscuits. Set it aside until you need it.
When the soup is simmering slowly, it is time to drop in the dumplings. Take small rounded scoops of the dough with teaspoon and drop them into the simmering broth, on top of the vegetables. Keep dropping the dough blobs until you have scraped the bowl clean. Now put the lid, or a handy pizza pan over the pot and let it simmer for 20 minutes. Do not peak. Let the dumplings simmer covered for the full 20 minutes. The thing about dumplings is that they cook partly from the boiling soup and partly from the steam. The steam is what makes them fluffy, and the simmering broth is what cooks them all the way through. If you peak while the dumplings are cooking then they will turn into lumpy, doughy rocks. When the time is up, serve the soup and dumplings as soon as possible. The soup will be thickened and the dumplings will be light and fluffy.
Makes between 4 and 6 servings.
NOTE: If you don't have any extra eggs, then leave out the egg and replace it with 3 tablespoons of milk. The dumplings will still be good.

Shrimp Cocktail
You could try something we call Voodoo Shrimp...
1) Make the sauce:
- Start with a tomato based sauce, I like a spicy barbque sauce, because you are just going to add more spice. I have also started this sauce from semi scratch. Starting with tomato sauce from a can, adding peppers (I use a special paste blend from a friend of mine it has Habenarios, Jalepenos, Scotch Bonnets and Chillies), and some molasses
- Kick it up as hot as you like (add tobasco or whatever)
2) Prep the shrimp
- Peel medium or large shrimp.
- Cut bacon strips in half (two shorter peices)
- Wrap the bacon around th shrimp and fasten with a toothpick
- Put into sauce bowl and marinade overnight
3) Cook
- Pre-heat oven to 375
- Spread shrimp onto cookie sheet
- Bake until done (about 10 minutes)

Serving cheese, cut cheese sticks into different shapes, squares, triangles, cubes, etc. Wrap & store. ___ Mix 3 cups ( 750mL) grated Cracker Barrel cheese and softened Cream Cheese using an electric mixer. Shape into 20-( 1-inch( 2.5cm) balls. Store in fridge for up to 2 weeks. Before serving, Roll the balls into finely chopped parsley; arrange balls into the shape of a tree, decorate tree if you like. Arrange the different cut up cheese pieces around bottom of tree.
To serve as a dip for cucumber sticks & cherry tomatoes, try this:
Miracle Whip Garlic Dip:
1/3 cup Each\ Miracle Whip ( 75mL) & Plain Yogurt
2/3 cup Kraft Greek Salad ( 150mL)
Crumbled Feta Cheese
1 clove garlic, minced
1/2 English cucumber, diced
Stir together; chill ( This is to die for, trust me on this one)
Here is another that will go over really well; You need cooked chicken ( cut into cubes) and apples ( peeled and cut into cubes) and skewers.
11/2 Tbsp. vegetable oil ; 11/2 tsp. curry powder ;
1 Tsp. Cumin ; Heat all ingredients together, on the skewers place a piece of apple & chicken ; stir-fry about5-min. or until tender.
Creamy Curry Dip: ( you may have to double this recepie)
1/2 cup Each Miracle Whip Salad Dressing and Sour Cream
( 125mL)
1 can ( 8oz/227 mL) crushed Pineapple
2 tsp. curry powder ( Mix all together and chill)
Arrange dip in center and your skewers all around.

I had an outdoor wedding in June last year and had success with petit ham rolls with a butter poppy dressing. They all disappeared. Also popular was boiled shrimp with cocktail sauce, spanokopita and praline almonds. Have fun!
