There are thousands of slow cooker recipes floating around. One that we love very much is beef and noodles.
Beef and Noodles
2 packages au jou mix mixed with the recommended amount of water on the pkgs
2 lbs beef stew meat in 1" chunks or whatever size you like the best
One large pkg or 2 small pkgs of frozen noodles or if you have the time home made noodles. The pkgs of dried noodles won't be as good but if that is all you have access to they will work iin a pinch.
Mix the 2 pkgs of au jou mix with the water and put in slow cooker with the stew meat and turn on low for 8 hours or on high for 4 hours. During the last hour add the frozen noodles to the mixture and turn onto high for another 40 minutes to an hour.
This is for a large slow cooker. For the more standard size halve the recipe. It will work just fine. It is a forgiving meal and won't hurt to cook longer it simply makes the beef more tender. Do not add salt to this recipe as the au jou is quite salty but pepper to taste.

A big Greek-style salad with lettuce or spinach, tomato slices, pieces of Feta or other cheese, and a selection of sliced veg that you like. Try for example raw mushrooms, cooked beets, grated carrot, red onions, etc. etc. You can add some cold chicken or ham if you like; buy one of those ready-roasted chickens and remove the skin before slicing the meat into small pieces.
Dress the salad with olive oil and wine vinegar, balsamic, or lime juice. Serve with wholegrain bread. Filling and delicious.

It's HOT here too so tonight we're having mixed salad greens with fresh tomatoes from our yard with chicken that I cooked this weekend, grilled with a balsamic dressing. Yummy. My husband has the cold chicken for lunch so we use it in a lot of different ways and I don't have to cook every night.

I had the most delicious thing in a top restaurant on my birthday.
Melon Soup. It was two types of Melon (gala and cantoloupe I think), blended down. They then put homemade raspberry coulis swirled through it and toasted coconut flakes on top. It was divine and a great way to end a meal. Give it a try. You won't be disappointed!

Macoroni /Tuna Salad
Boil 1 16 ounce box of macaroni(drain when finished)
Boil three eggs(chop up when finished)
Add 2 cans tuna fish
Chop up 1/2 onion
Mix everyting together, season, add mayo. Mix well then chill

if you like cabbage or broccoli slaw try some like we had the other night. we put in carrots slices, raisins and sunflower seeds, it was very good, even better chilled!
then just nuked some sliced chicken we'd baked the day before and put on the plate with a piece of whole grain toast and we were set! quite tasty and simple.
then there is always Jell-O with your favorite fruit inside for desert! ;-d

Chicken salad with grapes and pineapple and melon slices over a bed of lettuce.
Green salad with chopped up apples, walnuts or pine nuts, shredded parmesan cheese and balsamic vinaigrette.
Fresh tomato slices with olive oil and balsamic vinegar, sprinkled with fresh or dried basil and a little coarse salt and topped with slices of fresh mozarella cheese.
Shrimp cocktail!

fruit salad....some pineapple with cottage cheese... a nice chef salad.... a tortilla with sandwich meats and lettuce and tomato. A tomato sandwich...i know you said no sandwiches...but they are really good this time of year. vegetables with ranch dressing to dip them in
