I have thawed out some chicken leg quarters, now what to do with them is the question.

I like to serve this with mixed veggies...YUM!

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender

If you have air conditioning, Fried chicken, mashed potatoes and chicken gravy, corn on the cob, hot garlic bread

No air conditioning, throw them in a pan cover with a can of cream of mushroom or chicken soup, bake some potatoes at the same time add veggies and bread

you could rub them with salt and pepper fry them a little until they have a nice golden colour then place them in a baking pan with a little oil some garlic cloves and a few potatoes cut in quarters ,add a cup of water and bake them until the potatoes are done and the chicken legs have a nice brown colour. add whatever spices u like....

Grill them, peel the meat, cut up some lettuce and veges, shred some cheese, grab the ranch or italian dressing and make chicken pitas.

Pour your favorite campbells soup on them and bake them! Or grill them with bbq sauce, or make a lovely wine sauce with fresh garlic and shallots and cook them with baby red potatoes, or give them to someone else to cook them!

par boil them and take the meat of the bone and mix with some yellow rice and you have a quick meal.
