Something no one here could suggest, because it reflects a hobby or love that she alone has. It lets her know that you've been listening to her, and know she loves orange fuzzy knit sweaters, or her favourite type of oil paint she normally doesn't splurge on.

Doesn't matter what would win me over because its not me you are trying to win over. Your gift to her has to be based on what would be special to her, not me and not you. Anything else won't give you the result you are looking for, but I wouldn't get your hopes up too much, you don't win someones love with a gift, ever and if you can that person isn't worth having anyway. Your best bet is seriously to ask her what she wants, or just pay attention when you are with her to what kind of things she likes, what she hears about other people doing for each other that she thinks is sweet, stuff like that, if you listen there are clues everywhere.

Depends on how far along your relationship is. If this is more towards the beginning, maybe take her out to dinner somewhere quiet and conducive to conversation, and give her flowers and a nice CD with music she likes.
Of course, if the relationship is further along, you might well choose her birthday as a good occasion to offer her a lot more than that. Maybe you could procure a huge box, cover it in nice paper, decorate it with a ribbon, an appropriate card, park the box in front of her door (make sure she'll be home first :> ), ring the doorbell, then quickly step inside the box and close the lid and wait for the results :D:D:D

well my husband once hid all these smaller gifts all over the house with clues to the next one attached. there was one gift that was about 30 bucks but the rest were just small things that made him think of me. it was the effort and the thought that went into it all that made it so special.
he also once "cooked" me dinner.
i came home and the table was all done up with candles and set all nice and some flowers from outside and all this...and he sat me down and poured me some sprite into a wine glass (i was pregnant) and then said "i have a really awesome dinner for you in the microwave...i just need to warm it up"
he hit start and two minutes later served me a hot pocket.
we laughed so hard and it was such an awesome night.
yeah.
he got laid.

Something thoughtful. Maybe a CD that you made for her. Whether it's songs you know she loves, or songs YOU like that make you think of her. Some girls like flowers, and that's okay, but at least be original when giving flowers. Maybe just one or two really nice flowers. Just something thoughtful and different. Something that shows you listen to her, and what she likes. Maybe a planned weekend day trip? Just be creative, and have it come from the inside.

anyway, what i'd like is just what I want at the moment....and i'd usually say it a lot, "oh, gosh, I need a new watch." or "Oh, I really want to go to a spa...." If she's not dropping any hints, take her out shopping. (Girls just love a lot of attention...what better than to get what you want, and the cashier and people around see that he's paying!)
