If you have a Costco or Sam's Club near you (or something like that), go there and buy their quick appetizers: mini quiches, flautas, teriyaki chicken skewers. Those look impressive and are super easy. Just pop 1/3 of them in the oven a little before people start to arrive. And just keep adding a new batch as more people come in.
You can even cut up some cheese sticks (cheddar, mozarella) or fruit and stick fancy toothpicks in them. That looks nice, too!

Appetizers don’t have to be hard to make to be delicious. Why not buy some deliciously ripe pears and some applewood cheese, (they go together perfectly) and put them on a plate together? You could also do a bowl of grapes, a sharp cheddar and some sliced apples. If you have some wine to compliment them all ( I like an austrilian shiraz such as wolfblass) then it all feels very luxurious. My mom always puts out a bowl of goldfish crackers, a bowl of olives and a bowl of nuts. People love it! Add a few upscale chocolate bars – dark chocolate with chili peppers, or milk chocolate with almonds – and some small bowls of corn chips and salsa and you’ve got an easy spread that pleases every taste.

Portabello Pizza
This dish makes a great appetizer or hors d'ouevre. To serve as an appetizer or hors d'ouevre, cut the portobellos in half. If you want to serve this as a meal, leave the pizzas whole. The yield is 4 servings as an appetizer or hors d'oeuvre and 2 servings as a main course.
2 portobello mushroom caps
Olive oil spray
2 (1/4-inch thick) slices part-skim mozzarella
1 ripe tomato, cut into eighths
10 basil leaves, chiffonade
1 tablespoon pine nuts
Preheat oven to 350 degrees F.
Spritz mushroom caps lightly with oil spray. Transfer mushroom caps to a baking sheet and bake for 10 minutes. Remove from oven and top each with the cheese, tomato wedges, basil, and pine nuts. Return to oven and bake for an additional 5 minutes. Serve immediately.

Cucumber Party Canapes
Ingredients:
1 package (8 ounces) cream cheese, softened
1/4 cup sour cream
1 teaspoon dried dill weed
1 teaspoon lemon zest
1 cucumber
1 loaf Canape French Bread, sliced
1 cup cherry tomatoes, halved
Directions:
1. In Small Batter Bowl, combine cream cheese, sour cream, dill weed and lemon zest; mix well. Cut cucumber crosswise into 3 equal sections. Peel, seed and coarsely chop one cucumber section. Add to cream cheese mixture; mix gently. Cover and refrigerate until ready to use.
2. Thinly slice remaining cucumber sections using Ultimate Slice & Grate; cut each slice in half. Slice canape bread into eighteen 1/2-inch slices using Serrated Bread Knife.
3. To assemble canapes, place 1 scoop cream cheese mixture onto each bread slice using Small Scoop, spreading evenly. Top each canape with 1 cucumber slice and 1 tomato half. Serve immediately.
Yield: 18 canapes

try ritz crackers with a little cheezwhiz and topped with pepperoni or sausage. or add an olive on top. deviled eggs surrounded by celery and carrot sticks. make ham sandwiches and cut middles out with fancy cookiecutter. even using a fancy platter or bowl makes the appetizer appealing even if it's chip and dip.

take a sheet of puff pastry - spread with mustard, pepperoni, asiago cheese, 3/4 tsp of thyme, oregano and pepper.
roll up, chill for 30 min. cut in 1/4 inch slices and bake in 400 degree oven until golden about 15 min.
yummy and quick and easy.

Take some cream cheese and season with garlic salt and paprika. Add some green chile and spread on flour tortilla. Roll it up and cut into 1/4 in. slices. Place on fancy plate and serve. They look like pinwheels & are really good!

get a package of the little smoked sausages and a couple of cans of Pillsbury crescent roll dough, cut each crescent slice into 2 equal sides. and wrap the little smokies up and bake them according to package suggestions. serve them with Dijon mustard dip or a horse radish sauce...good

Wrap Bacon around water chestnuts and bake them in the oven (toaster oven). They are so yummy and usually a big hit
