Cut it in Half lengthwise scoop out some of the flesh of each half and whip up your favorite hamburger mix and add the scooped out squash flesh into the hamburger mix, and stuff the hollow cavity areas of the two halves and roast in your oven like a regular meatloaf. Cover with a Italian spaghetti sauce if you wish or just eat it the way it is.

You can roast them in the oven with a little garlic and olive oil or butter, or chop them up into a stew (maybe boil them a little first, so they soften up, chopping raw squash is difficult). You can also make mashed squash, like you would with mashed potatoes, but add cinnamon and a little brown sugar, and use less cream or sour cream. They're good in pasta sauces (usually with pork, but chicken would probably work, too).
They're good in all sorts of soups, like carrot or zuchini, too.

First, roast it, then scoop out the flesh, saute it with seasoned, cooked ground beef and bread crumbs, return the mixture to the hollowed out squash, top with shredded cheese, then put it under the broiler for a few minutes (until the cheese melts).

Title: Butternut Squash Soup
Servings: 6
1/2 c Onion; Chopped, 1 Medium
2 T Butter Or Margarine
2 c Chicken Broth
1 lb Butternut Squash; *
2 Pears; Pared and Sliced
1 t Thyme Leaves; Fresh, Snipped
1/4 t Salt
1/4 t White Pepper
1/4 t Coriander; Ground
1 c Whipping Cream
---------------------------------GARNISHES---------------------------------
1 Pear; Peeled, Sliced
1/2 c Pecans; Toasted, Chopped
* Squash should be pared, seeded and cut into 1-inch cubes.

Cook and stir onion in margarine in 4-quart Dutch oven until tender. Stir in broth, squash, 2 sliced pears, thyme, salt, white pepper, and coriander. Heat to boiling; reduce heat. Cover and simmer until squash is tender, 10 to 15 minutes. Pour about half of the soup into food processor workbowl fitted with steel blade or into blender container; cover and process until smooth. Repeat with remaining soup. Return to Dutch oven; stir in whipping cream. Heat, stirring frequently, until hot. Serve with sliced pear and pecans.

grill it. Remove seeds, add water to hollowed out section and put on the grill. Grill on medium heat until tender. Check often to make sure you are not burning it. Pour off any remaining water and serve with butter and a touch of maple syrup. Yum!
Or bake it. Again remove seeds, place in a 9 x 13 baking dish in about 1-2 inches of water. Bake at 375 for about 1/2 hr. check for tenderness. scoop out pulp mix with butter and syrup.

Sneaky Crock Pot Chili
* 1 Pound winter squash
* 1 lb. beef stew chunks, cut small (bite-size)
* 1 can red kidney beans
* 1 can pinto beans
* 1 large can stewed or cooked tomatoes
* 1 can condensed tomato soup
* 1/4 cup water
* 1 small onion, diced
* 1 large green pepper, diced
* 1 teaspoon garlic powder
* 1 tablespoon chili powder
* 1/2 teaspoon salt
* 1/2 teaspoon crushed red pepper flakes (hot)
* 1/4 teaspoon black pepper
PREPARATION:
Combine all ingredients in crockpot; mix well. Cover and cook chili on low about 8 hours, or until the beef chunks are very tender and fall apart easily. Add more water if you like your chili thinner.
Sneaky Meat Loaf:
* 1/4 pound ground chuck
* 1/4 pound ground pork
* 1/4 pound ground veal
* 1 1/2 cups cooked squash, mashed
* 1/2 cup finely chopped onion
* 2 slices bread, crusts removed
* 1/2 cup milk
* 2 eggs, lightly beaten
* 1/2 cup ketchup
* 1 tablespoon Worcestershire sauce
* 2 teaspoons Dijon mustard
* salt and pepper
* 1 large hard-cooked egg, peeled
* 2 tablespoons diced onion
* 8 ounces sliced mushrooms
* 1 tablespoon vegetable oil
* 1 tablespoon flour
* 2 cups beef broth
PREPARATION:
In a large mixing bowl, combine ground meats and squash; blend with the finely chopped onion and set aside.
Tear the trimmed bread into small pieces; soak in the milk until most of the milk has been absorbed.
In a medium bowl, combine the soaked bread with the beaten eggs, ketchup, Worcestershire sauce, and mustard. With your hands, blend the egg mixture thoroughly with the meat. Season with salt and pepper. Place one-third of the meat mixture on a baking sheet (with sides), mounding it slightly in the center. Form mixture into an oval shape. Place the hard-cooked egg in the center; mound the remaining meat on the top and pack down. Bake meatloaf in a preheated 400° oven for one hour.
While the meatloaf is baking, sauté the diced onion and mushrooms in the oil until tender. Add the flour; cook until lightly browned. Add the broth and simmer for about 10 minutes. Season to taste with salt and pepper. To serve, slice the meatloaf; top with mushroom sauce. Meatloaf serves 6.
Sneaky Lasagne:
Use your favorite Lasange recipe but use thin slices of squash instead of noodles.
Get Creative! Use squash in place of other ingredients in your favorite recipies....
Thin sliced in place of lasagne noodles
Pureed in place of pumpkin(pumpkin pie) or in place of Bananas (banana bread)
Sliced in half and baked with butter in place of baked potatoe
Sliced and deep fried in place of french fries.

You can use it in
1. stir fry
2. pasta dishes
3. saute it in just a bit of extra virgin olive oil and sprinkle some lemon zest, lemon juice, salt n' pepper on it. Makes a very tasty healthy side dish.
