If you baste it with a little bit of butter or olive oil, the skin will get a papery texture...still somewhat dry, but easier to get thru than leather.

Also, try adding a pan with some liquid into the smoker. This will help keep things moist.

Try keeping a little moisture in the pan and smoking the chicken breast side down for most of the cooking time. Maybe for the last 30 minutes or so flip it breast side up to get a nice brown without the leather.

marinate beforehand and be sure to keep the steam pan full. If using an electric smoker, shouldn't take more than 2-3 hours on a calm summer day. If necessary finish the cooking in the oven at 350 for about 30 mins. Good luck and happy cooking!

You peel the skin off. It is normal that the skin is dry after smoking. Smoking will reduce the moisture in the meat

You have to use a liquid to keep the smoke and air moist(beer,apple jucie)-you can mop it with the same type of mixture every 10-15min

First of all, don't use rolling papers. Instead, use a water pipe and that will improve the taste of the skin and the breast.
It may be hard to keep it lite though.

Rub with Italian Dressing, will have a touch of flavor, and keep the skin moist!! You can use the light, fat free. Check out kraftfoods.com for more ideas and lots of receipes.(even shopping list!! ITS GREAT!!!!)

Try a marinade of some sort. Grilling without some form of moisture on it will dry it out quickly.

I would remove the skin first. It's not very appetizing when the meat is smoked.
