Roasted Garlic & Bourbon Marinated New York Strip with Roasted Onion Sauce
Machine Shed Cooking Class recipe

INGREDIENTS:
4 (12-14 oz) New York Strip Steaks

MARINADE:
3 T. olive oil
2 T. dijon mustard
1⁄4 c. bourbon whiskey
1/3 c. soy sauce
2 T. red wine vinegar
1 T A-1 steak sauce
1⁄4 C. light brown sugar
2 T. minced red onion
1 T. minced roasted garlic
2 tsp. fresh ground black pepper
ROASTED ONION SAUCE:
1 medium sweet onion, cut into 8 wedges
1 tsp. Olive oil
2/3 c. beef broth
1 tsp soy sauce
4 tsp cracked black pepper

PROCEDURE:
Combine all ingredients for marinade.
Place steaks into marinade and refrigerate at least one hour, or overnight if possible.

For the onion sauce,
Coat the onion wedges with the olive oil and sprinkle with salt and the black pepper.
Roast on a baking sheet in a 375º oven for 25 minutes or until soft and translucent
In a blender or food processor: blend the onions with the soy sauce and beef broth.
Remove the steaks from the marinade and pat dry.
Grill to desired doneness and top with the warm onion sauce.

What I do is simmer chicken breasts (the bone in kind) in water with some assorted veggies, pepper, salt etc. like making soup. When the meat is done and falls of the bone easly I take it off in nice little chunks and freeze little batches. When your hungry you can use the chicken for a variety of things, creamed chicken on biskets, chicken enchiladas, chicken salad etc. Far cheaper and more tasty then store bought processed chicken pieces. Freeze the broth after straining out the veggies and use it for cooking too.

I also make huge batches of spaghetti sauce as well as hamburger seasonsed with taco seasonings for the freezer.

use carcass to make base for soup. 2 days

have chicken sandwich 1 day and lunch

top salad with rest 1 day
