Why all the questions on eggs recently ? First of all, eggs used to be stored on the counter in a bowl, not refrigerated. They'll keep longer cooled, but it's not mandatory. Chickens aren't hatched in coolers.

If you're worried about the egg being spoiled, you can put it in a bowl of water. If it floats , toss it (no not literally). If it doesn't float , it's ok. If it's 'old' the yolk will be a deep yellow to orangish color. If it's fresh it will be bright yellow. The taste and texture might suffer a bit if it's old so it may not be at it's peak for frying, but perfectly good for cooking in other dishes.
Now if you take that floating egg (it floats because of the creation of a gas, sulphur dioxide) and you do literally toss it, you want to get out of the area. Sulphur dioxide is the "rotten egg" smell that everyone so doesn't love. You'll figure out right away the egg isn't going to be good to eat.
The 'sell by' date on the egg carton is there so the store can keep their stock rotated...first in , first out. I can't recall the last time I purchased a bad egg..not counting ones that got cracked and then spoiled.

The date on eggs isn't an expiration date. It's a last sale date. They should be fine for a week or so after the date. Best for hard boiling probably rather than poaching.

I have used them past the expiration. If you immerse an egg in (cool) water, you can judge how fresh it is by how high it floats. Really fresh eggs won't float at all; the higher it floats, the less likely it is to be fresh.

Usually products are good for up to 7 days after the "sell by" date

Don't know, but rotten eggs will float in of water. So put them in water first. If it floats, don't use it. Otherwise, good to go.
