A really easy method. Smother them in barbecue sauce and bake them in the over. If you like them hot, add a little tocasco sauce to the barbecue sauce before spreading it on the wings. Line your pan with aluminun foil and it will make clean up easy also.

You can also cook them on the grill, but it is a lot more trouble.

1 cup vegetable oil
1 pound chicken wings
3/4 cup butter
1/4 cup hot pepper sauce
What you do:
In a large skillet or deep fryer, heat oil to 375 degrees F (190 degrees C). Fry wings for approximately 8 minutes. Let drain on paper towels. Place the chicken wings in a large mixing bowl.
In a large saucepan, melt butter and hot sauce. Pour the sauce over the chicken wings and toss until all wings are coated.

Tips for Making Perfect Buffalo Wings

The key to good Buffalo Wings is how you prepare them as well as the ingredients and the handling of the wings. The most successful wings served up here in Buffalo are what they call "Grade A Grinders." Fresh wings that are very large and meaty. Usually, you cannot get them in a frozen package, but can get them from a poultry dealer. Once you find them make sure they are absolutely fresh.

Wash them in cold water, split them at the joint and remove the tips. Place them on a rack on a pan and refrigerate overnight to let the blood and water drain out of the wings. THIS IS A REAL KEY. Drying the wings under refrigeration will help to make them a much crispier product, once deep fried.

Next, use a deep fryer or a very heavy deep pot with a thermometer and add the oil. Peanut oil is very good, or a commercial product such as can be found at a restaurant cash and carry called Mel Fry.

Heat the oil up SLOWLY, to 365 degrees F, and depending on the size of the fryer, deep fry the dry wings 6 to 8 minutes in small batches, until thoroughly done and golden brown. Hold the cooked wings in a warm oven if necessary.

A combination of melted margarine and hot sauce in the ratio of 1 part margarine to 3 parts hot sauce will add the right zing. The key here is to add just enough sauce to coat the wings - the more sauce you add, the hotter they will be.

For the very brave, 1 part margarine to 3 parts hot sauce and 1 part Tabasco is referred to as "Suicidal Wings" by the late and dear Don Bellissimo, who owned the Anchor Bar.

Working quickly, place the deep fried wings in a large bowl and add the sauce mixture, shaking to coat them. There are many good hot sauces to use; the one they use is either Durkee Franks Red Hot Sauce or Wingers Original, again found in a restaurant cash and carry.

Celery sticks and chunky blue cheese dressing (Ken''s Buffalo Style Blue Cheese is a popular one) and plenty of napkins.

Dragon's Breath Wings

These are as delicious cold as they are straight from the grill.

Marinade
2 tablespoons rice wine
2 tablespoons soy sauce
1 tablespoon ginger root, grated

Sauce
1 garlic clove, minced
1 tablespoon ginger root, grated
4 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1/4 teaspoon hot chili oil
2 pounds chicken wings
Chopped green onions

Combine the marinade ingredients in a large plastic bag. Add the chicken wings to the bag and marinate at least one hour in refrigerator.

Drain the wings. Grill until cooked, or bake on middle shelf of a 400 degrees F oven for 40 minutes.

Mix the sauce ingredients together until thoroughly blended.

Arrange wings on platter. Pour sauce over them to completely cover. Garnish with finely chopped green onion.

If they're frozen, heat some vegetable oil in a deep pot or pan. When the oil is hot enough, place 10 to 12 wings in the oil. If you're pot is small, use less. You don't want to overcrowd the pot with too many wings or else the temperature of the oil will go down and the wings won't fry right. So fry them up until they're golden brown. Take them out and place them in a bowl or a sheet pan lined with paper towels to drain. Sprinkle with salt. Then take your favorite hot sauce or wing sauce (mine is Frank's Red Hot sauce and mix with melted butter. Pour over wings and mix until evenly coated. Serve with ranch and bleu cheese dressings and plenty of celery sticks. Happy cooking!

PUput flour, salt, pepper, and any other spices you like into a zip-loc bag. If your looking for hot wings add cumin or hot chili powder. after coating all the chicken place into a deep fryer (or a frying skillet with tall sides, fill with oil about 1-2 inches) fry about 4-5 wings at a time, fry for 9-10 minutes at 350-375 degrees. in another bowl add 1/2 stick of mealted butter, 2 tbls spoons of honey and 1 cup of your favorite bbq sauce, add cooked chicken and coat each piece with sauce.. good eats. If your looking to eat hot wings then add 1/2 the amount of bbq sauce and add 1/2 cup hot sauce to the mixture. i do both ways and i just add 1/2 cup of hot sauce after i have made enough bbq wings. good luck!!

INGREDIENTS:
12 to 24 whole chicken wings (or buy them chopped into wings and drumlets) - Note: double the recipe for larger groups
CHICKEN WING MARINADE:
1/3 to 1/2 cup liquid honey (1/2 cup if you have more than 12 wings)
3 Tbsp. soy sauce or tamari
2 tsp. dark soy sauce
3 Tbsp. fish sauce
juice of 1 lime
1 Tbsp. chilli powder
1 thumb-size piece galangal or ginger, grated
grated rind of 2 limes (limes are easier to grate when left whole - only grate the rind, not the white flesh underneath)
1 fresh red chilli, minced, OR 1 tsp. red chilli sauce (or more depending on how spicy you like your wings)
2 cloves garlic, minced
1/2 Tbsp. coriander seeds, ground (you can grind them yourself in a coffee grinder, or buy already ground)
GARNISH (optional):
1/2 cup fresh coriander, roughly chopped
PREPARATION:
Make the marinade by combining all marinade ingredients together in a large mixing bowl (one that can accomodate all the wings).
Mix the wings in with the marinade, stirring well to coat the meat.
Allow wings to marinate while you warm up the grill or BBQ. Be sure to stir the wings occasionally. Make-ahead Tip: For even better flavor, allow the wings to marinate for several hours or overnight.
Place wings on a hot barbecue. Baste with a brush once or twice on each side (with remaining marinade from the bottom of the bowl), or until the wings appear nice and sticky.
Cook until well done (15 to 30 minutes, depending on how hot your barbecue or coals are).
If grilling in the oven, turn oven to the grill setting and place wings on a grill pan (a grill with a pan underneath to catch drippings). Place wings close beneath the top heating element of your oven. Watch the wings carefully, turning often to make sure they don't burn. As with the BBQ wings, baste the wings once or twice on each side with remaining marinade from the bottom of the mixing bowl.
Serve hot with a little fresh coriander sprinkled overtop (if desired). These wings are good eaten alone, or serve with hot white or brown rice and a salad for a complete and nourishing meal. Enjoy!

1. Preheat oven to 350.
2. remove chicken wings from package.
3. lay chicken wings on foil lined cookie sheet.
4. put pepper on chicken wings.
5. cook chicken wings 40-45 minutes.
6. remove, let cool down
7. cut chicken wings, if not pre-cut, and only if you want them cut.
8. put sauce (hot sauce, bbq, whichever works for you) on chicken wings by tossing in a bowl.
9. put back in oven for another 20 minutes to let sauce cook on to the wings.
10. Take out and enjoy!!!!

You can cut the wings before you cook them if you prefer, but I have found it much easier to cut them after they have been cooked.
If you cut them before, you don't have to do that cool down process, just take them out, sauce them , put them right back in.
Of course you have to turn the oven off, during the cool down and turn back on again when you re-cook.
That's as step by step as I can make it for you.

1) wash wings let them sit in a bowl of salt water for about 29 minutes, then wash again.
2) drain wings
3) place flour in a big or brown paper bag
4)pick what seasonings that you want to use. I would suggest onion powder,garlic powder,poultry seasoning,lemon pepper,regular pepper,parsley,paparika( just enough to taste), and ms. dash if handy
5) place all seosonings in with flour and mix.
6)cover wings in flour batter
7) place wings in hot grease on medium/high
8) when wings are brown and they are floating at the top, wings are done.
9) drain grease on wings, you can use a brown paper bag to drain them.
then cover with hot sauce(optional) and enjoy.

flour the chix wing fry them til brown remove wings add i can chix stock 1/2 cup of wine (red)place chix wings and fesh mushrooms (small button if you have them)1/2 stick of butter season to taste and reduce until you get the thickness you like (serve over noodles or rice ) ___ mock coquvin!!!!!!!enjoy

Lay them out on a tray and put some freshly cut garlic on top of them. put them in the oven for half an hour to 3/4 of an hour then serve. they are delicious
