Boneless, skinless chicken breast filets & brown rice with corn on the cob.
A pack of chicken breast filet is about $7. Brown rice is $1. A frozen pack of corn on the cob (the little ones-6pack) is $3. Get a bell pepper ($1), an onion ($.50) and some seasoning salt ($2) and Mrs. Dash/Table Blend with green top ($2).
Rinse that chicken off. Cut that bell pepper & onion up. Season the chicken with the Mrs. Dash & seasoning salt. Boil the water for the rice. Boil the corn. All of these things should take about 30-45 minutes to get done. That's pretty quick. Less than $20 too.

Here is where if you want to save on cooking times in the future.get yourself a pressure cooker. They are safe, convenient versatile, and FAST. It will save you 75% or more on your cooking times and you can do one pot dinners including roasts that just come out awesome. They range in price from $40 to $250 depending on type, brand, features etc.You will wonder how you ever got along without one.Forget about the old stories of them exploding as the modern cookers have multiple safety devices. They can cook a lot of foods much faster than a microwave too.You could cook a complete corned beef and cabbage dinner with all the veggies in under 45 minutes and the corned beef will be the most expensive part. Also, you can choose the cheapest cuts of roasts too because pressure cooking tenderizes even the toughest meats.

I go to dreamdinners.com look at their menu for the month. Then pick out what I like. I then go to cooks.com and get the recipe. I have found that most of the meals take spices I already have and are quick and easy. If you have time, I highly suggest making several meals and freezing them to use on those nights when there is NO time and NO money for eating out. I reqularly feed my family for less than $300 a month side dishes and all.

Grilled cheese sandwiches, plain or with ham, turkey or bacon Tuna or chicken salad, as a salad or sandwich Soup is always good by itself or with a sandwich Chef's salad I love the frozen parmesan encrusted tilapia. You can put it in the oven and while it's cooking (about 20 min.) you can make steamed veggies or a salad and garlic bread to go with it. That's a little more than 10 minutes, but not too much and you have a complete meal with no trouble.

Iron Chef's General Tso's sauce
Put all in a wok and heat. So simple and so delicious. My family thinks it tastes just like Chinese food but is very healthy (no oils-steam heats the food) and my family is PICKY. Takes about 5 minutes.

This is quick to prepare and easy, but does take some time in the crockpot
Take 4 to 6 frozen chicken breasts, put them in a large crockpot, pour 1 can of cream of chicken soup over them along with 1/2 can of water. Put the crockpot on low and let it cook for 8 hrs. When done it is really tender, and is good to put on buns for sandwhiches, over brown rice, over noodles...there are many possibilites...
This is my husbands favorite meal, so when I make it I usually makes extras so that I can freeze the leftovers..it warms up really well.

Chicken and Mushroom in a hurry
Marinate chicken pieces with knorr liquid seasoning and juice of 1 lemon. Place in well-oiled (butter, canola, or Pam spray) glass baking dish. Top chicken with Campbell's mushroom sauce (Healthy Request or fat free). Bake at 350 degrees for 45 minutes or until done. Serve with steamed veggies and rice.

Buy some ham hocks, split peas, onions, garlic, carrots and/or celery and make split pea soup. Should cost less than $10 and take about 1:20 to fix. You could trade the split peas for lentils without changing the time or money.

Ingredients:
one pound of ground beef
one onion chopped
one tomato chopped
one clove of garlic chopped
Half a can of Tostitos Medium Cheese Salsa
One bag of Tortilla Chips
in a pan put the onion, the tomatoe and the garlic and saute all the ingredients in a tablespoon of oil. When the onion is tranparent, add the ground beef. Let it cook and add the tostitos cheese. Wait until it bubbles. Put that in a bowl and eat it with the chips.
