The subways really don't exit New York. So if you stayed in Jersey you would be dependent upon the train, PATH, or buses to get in and out.
You can try Jersey City or Hoboken.
I found a great Hostel in the city on a Saturday night for less than $100. It was clean, close to subway and what I was doing (concert). It was totally worth the expense.
I doubt you would pay much less by staying in New Jersey.

It's really not worth it- youll miss a lot of the freedom and fun- think it over
