I have always made No-Peek Chicken with uncooked Minute Rice. Will regular uncooked rice come out as moist as the Minute rice?

yes it will, I use uncle ben's wild rice, and it isn't a minute rice

INGREDIENTS:
1 can (10 3/4 ounces) cream of mushroom soup
1 can (10 3/4 ounces) cream of celery soup
1/2 soup can water
1/2 soup can dry white wine
1 package long grain and wild rice mix with herb seasoning
8 pieces chicken
1 package dry onion soup
PREPARATION:
Mix cream soups, water, and wine with the rice mix; pour into a 13x9x2-inch baking pan. Place chicken pieces on top and sprinkle dry soup mix over all. Cover with foil and bake for 2 hours at 350°.

This one works well and you don't use minute rice.
THE REASON IT'S CALLED no peek is because if you open the lid, you are letting the moisture out which will dry out the rice - or not cook it enough and make it hard and wet.

Yes, it will, but you will have to double the liquid, lower the heat, and increase the cooking time...it should be about 12 minutes. Enjoy!

I think the best thing to do is try it. You can always try increasing the liquid a bit.

i use the same recipe that some one else sent and I add sliced water chestnuts---it gives it a bit of a chrunch
