This hotel is decent, right in Paia, a very small surf town with fewer tourist. This is a little off the beaten path but is about 5 minutes from where I grew up.
Check out http://www.maui.net. This is basically the official site on Maui, meaning it is like an online classifed that people on the island use, or at least I do.
If you want to get the best deal you need to get on the phone and call. Internet rates are generally the highest, but at least you can see the pictures and get an idea of
what is out there.
If you want an adventure with private beaches you can have that too. Just rent a nice van after spending the first night in a hotel. You can drive down to Hana, which is an amazing experience in itself. I have never been shy about just parking the van, and pulling over and setting up camp on your own private beach. When you get tired of sand in your hair just walk into a hotel, where you can negotiate the best rate. If you decide to go with hotel reservations and are staying one week make sure you get a weekly rate equal to one night's stay. You can never negotiate with the fancy resorts though. The Sheraton is still my favorite if money were not a factor. That is the place we would go for even a a very nice lunch as locals..

The last time we went we stayed in the Kaanapali Beach hotel which is right next to the Sheraton Maui on Kaanapali Beach.

It was a decent hotel for under $250 a night and included breakfast every morning.
Another option is to do an Expedia.com search and look for hotels on Maui that are not on the beach. A few years back we stayed in a hotel in the town of Lahaina called the Maui Islander. I think the name has changed now but it wasa nice hotel with large rooms and a good pool. it was not on the beach.

There's a lot for under $250 a night. I've stayed in several areas of Maui. Kaanapali has a lot of places and prices.Lahaina has a few at really good prices. For condos check out Kihei. Very expensive is the Wailea area. Check out specials they have going. There are always good deals out there, you just have to hunt a little. Have a great time and the best Luau is at the Grand Wailea (Hilton) in Wailea and is worth the $$$$$.

I suggest you google bed and breakfast in maui- you should be able to locate a quaint very private and quiet B&B in Lanai I believe. Very close to everything and we didn't even know there were other guests at the place. It was not an intrusive B&B.
One of the best things my wife and I ever did on a vacation involved very little money. We walked to the Safeway their in Lanai and bought a rotisserie chicken. Walked over to the beach near by and plopped ourselves on the beach to watch the sunset. That was fun.
You have to take the drive around the island- ignore them when they say you need 4WD- it's a rental for pete's sake.

Try the Maui Prince - it is in Makena (which is right next to Wailea and Kihei). We went there the first time we visited and although its not as fancy as the others, it was clean, big, and the service was GREAT. Plus, its right on the beach...which is very peaceful and quiet. They also have a great snorkel trip that takes off right from their beach. Good luck!!

The prices is something that hits everybody who comes here. They are aghast at the price of everything. "how do you live here?" they ask. As a resident, you have to know your way around. There's the coma ina rate that saves you lots of money. There's friends who help you along the way. It's not cheap living on an island.
I've been to the Ilikai hotel. It wasn't bad, they tell me. http://www.ilikaihotel.com/ and http://www.ilima.com/
Oh, when you come here, make sure you visit the Falls of Clyde. It is a rare museum ship that no one should miss if they are in Honolulu. We have lots of nice ethnic restaurants. The Japanese may be some of the best.
