For the same reason there are so many different sub species of monkeys and apes....one mutation doesn't affect the entire species, it also depends on their environment and how much ones needs to adapt to it. The same arguement can be used when looking at mankind.
It all comes down to your core belief in the end though as to why we are what we are. Wether you believe in the science of evolution or the religion of a god creating the universe, it's your choice and that's what really matters
