here are two FABULOUS low carb recipies that would be perfect for your low carb dinner party and wont break the bank.....first do a broccoli salad....get 2 heads(or enough to accomodate your guests) of fresh broccoli, 1 lg red onion, one cup shredded cheddar cheese,1 cup of fried crisp bacon chopped into small pieces,cut the broccoli into bite size florets and add to a nice salad bowl...dice the onion into the bowl add the cheese and bacon....salt and pepper to taste and use ranch dressing on it.
The next recipie is for a fabulous roasted pork loin or shoulder(shoulder is cheaper) get a fresh pork shoulder and season it with salt and pepper and garlic powder....then brush on grey poupon dijon mustard all over the shoulder and cover it loosely with foil and bake on 350 degrees til completely cooked.(dont cut it right away let the juices re-distribute)
For a great low carb starter ....take english(seedless) cuccumbers and wash them and leave the skins on....slice the cuccumbers in rounds and top with philidelphia cream cheese(the garden veggi flavor). This doubles as a low carb cheese and crackers tray

The Atkins website has recipes for all 4 phases of the diet. That's where I get my low carb recipes from. Another good source is Low Carb and Lovin' It with George Stella on foodnetwork.com
You can always roast a couple of chickens with onion, bell pepper, mushrooms, garlic, lemons, and celery. Just line a roasting pan with foil. Cover bottom with chopped veggies and stuff the chickens with veggies and lemons and lay on top of bottom layer of veggies. Rub a little olive oil, italian seasoning, salt, and pepper on the chickens. Cover and put in 400 degree oven. Cook for 1 hr and then remove lid and cook another 30 minutes until chickens are golden brown and juices from leg and thigh run clear. Serve with a big green salad, creamed spinach, green beans, or cabbage.

Why don't you bake or grill some sort of fish...Maybe grilled salmon
Balsamic Grilled Vegetables
1 medium yellow squash, sliced on bias
1 medium zucchini, sliced on bias
1 medium eggplant, sliced into 1/2-inch thick circles
1 red onion, sliced in 1/2-inch thick circles
2 Roma tomatoes, sliced in 1/2 lengthwise
1 red bell pepper, stemmed, seeded, and quartered
1 yellow bell pepper, stemmed, seeded, and quartered
2 portobello mushroom caps, gilled and peeled
3 green onions
Kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
1/2 cup balsamic vinegar
Preheat grill to high.
Prepare all vegetables. Place vegetables in a roasting pan with the mushroom caps and green onions. Season vegetables generously with salt and pepper, and toss with the olive oil and balsamic vinegar. Place vegetables, cut side down, on the hot grill and cook for a couple minutes on each side, or until tender and nicely marked by the grill.
Remove from grill and toss with an additional 1/4 cup balsamic vinegar. Season with salt and pepper, to taste.

Atkins diet is great! I lost 65 pounds with it. Every library has his book. The recipes emphasize low carbohydrate foods and there are Atkins Diet recipes books in the library too.

Black Bean Salad
INGREDIENTS:
1 (15 ounce) can black beans, rinsed and drained
2 (15 ounce) cans whole kernel corn, drained
8 green onions, chopped
2 jalapeno peppers, seeded and minced
1 green bell pepper, chopped
1 avocado - peeled, pitted, and diced
1 (4 ounce) jar pimentos
3 tomatoes, seeded and chopped
1 cup chopped fresh cilantro
1 lime, juiced
1/2 cup Italian salad dressing
1/2 teaspoon garlic salt
DIRECTIONS:
In a large bowl, combine the black beans, corn, green onions, jalapeno peppers, bell pepper, avocado, pimentos, tomatoes, cilantro, lime juice, and Italian dressing. Season with garlic salt. Toss, and chill until serving.
Broiled Tilapia Parmesan
INGREDIENTS:
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS:
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

A low carb diet is also a high fat diet. It doesn't work unless you increase the amount of fat you're eating. If you eat fat you train your body to burn fat and it will then go on to burn your stored fat. If you eat carbs all the time then your body only knows how to store fat. So go buy yourself a lot of butter, ghee, lard, dripping, duck fat & coconut oil. I always make sure I have two of each of these available all the time. When I get down to my last one of any of these I immediately put it on my shopping list. Now cook everything in one of those fats. I even cook bacon in a big dollop of lard! You chicken will be delicious if you cook it in duck fat. And make sure you keep the skin on. I don't steam or boil vegetables. I bake, fry or roast them in ghee, butter or dripping. If you cook a steak make sure you keep the fat on - ask your butcher for one with all the fat. Then after you cook it add a big lump of garlic parsley butter on top. Delicious! That's the way to go with low carb. It makes everything taste great and you can make some wonderful meals.
