1 broiler/fryer chicken, cut into 8 pieces
2 cups low fat buttermilk
2 tablespoons kosher salt
2 tablespoons Hungarian paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
Flour, for dredging
Vegetable shortening, for frying
Place chicken pieces into a plastic container and cover with buttermilk. Cover and refrigerate for 12 to 24 hours.
Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan. Once shortening liquefies raise heat to 325 degrees F. Do not allow oil to go over 325 degrees F.
Drain chicken in a colander. Combine salt, paprika, garlic powder, and cayenne pepper. Liberally season chicken with this mixture. Dredge chicken in flour and shake off excess.
Place chicken skin side down into the pan. Put thighs in the center, and breast and legs around the edge of the pan. The oil should come half way up the pan. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side. More importantly, the internal temperature should be right around 180 degrees. (Be careful to monitor shortening temperature every few minutes.)

We are having reuben sandwiches and cole slaw. Quick and easy. Another quick meal would be baked fish and tossed salad. Another quick meal would be baked spaghetti ,salad and garlic bread. Summertime means lots of salads and otherwise light foods. Any type pasta salad,corn on the cob, tuna salad,fresh grilled veggies,just to name a few. I understand not knowing what to cook. Sometimes I just don't want to think about it,and that usually means pizza tonight. Good luck.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

APPLE STUFFED PORK ROAST
1 small apple, chopped
1/2 cup soft bread crumbs
1/4 cup chopped celery
2 tablespoons raisins
2 tablespoons chopped walnuts
2 tablespoons sliced green onions
Dash ground nutmeg
2 tablespoons apple juice or apple cider
3/4 pound pork tenderloin, trimmed of separable fat
1/2 cup apple juice or apple cider
1 1/2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
For stuffing, stir together the chopped apple, bread crumbs, celery, raisins, walnuts, green onions, and nutmeg. Stir in 1 tablespoon of the apple juice or 1 tablespoon apple cider. Butterfly the pork tenderloin. Cover meat with clear plastic wrap. Pound with a meat mallet to ½-inch thickness. Spread stuffing over meat. Roll up from one of the short sides. Tie with string to secure. Brush with some of the remaining 1 tablespoon apple juice. Place meat on a rack in a shallow roasting pan. Roast, uncovered, in a 350' oven for 1 to 1¼ hours or till meat is no longer pink, brushing with the remainder of the 1 tablespoon apple juice after 30 minutes. Meanwhile, in a small saucepan stir together the ½ cup apple juice or ½ cup apple cider, cornstarch, and cinnamon. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes more. Serve with roast. Makes 4 servings.

Do you have lemons, chicken, flour, olive oil, butter, tomato sauce, and milk?
mix milk and juice of lemon
dredge chicken in flour...cook in 4 tablespoons butter and 3 tablespoons olive oil, when chicken is brown on both sides add tomato sauce and milk mixture. Stir and cook on low-medium heat for 30 minutes.
Serve over pasta

I just had Chicken in honey and mustard sauce with mash, peas and carrots followed by chocolate fudge cake and it was delicious!
