Here is a simple dish. Place fresh green beans or wax beans (the yellow kind) into salted boiling water and add in several sliced fresh onions. On the side fry some bacon and when crispy drain dry. When beans are tender, drain, add some salt and pepper to taste and crumble the bacon strips into the beans and add some butter on the top. You can also add slices of hard boiled eggs and the dish tastes Great.

I cook up thick-sliced peppered bacon, cut in small slivers. Leave the bacon and bacon grease in the pot. Then I put in the fresh green beans and cover it. I let is cook on low for at least a couple hours. The beans get kind of shriveled up. Everyone I've served it to loves it. I make a big pot of them.

Hariton's 'Famous' Vegetarian Casserole
INGREDIENTS:
8 large eggplants
8 large potatoes
8 green bell peppers
8 large onions
8 summer squash
6 tomatoes
1 pound fresh green beans
1 pound whole fresh mushrooms
2 bulbs garlic, cloves separated and peeled
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
1 (15 ounce) can tomato sauce
3/4 cup olive oil
salt and pepper to taste
DIRECTIONS:
Prepare the eggplant before assembling ingredients, by cutting them into 2 inch chunks and putting them into an extra large bowl with salted water to cover. This will draw out the bitterness from the eggplant. Let this sit for about 3 hours.
Preheat oven to 375 degrees F (190 degrees C).
Cut the potatoes, green bell peppers, onion, squash and tomatoes into 2-inch chunks. Cut the green beans and mushrooms in half and peel the garlic cloves.
Drain and rinse the eggplant, then combine it with all the other chopped vegetables, the dill, oregano and basil and place all into a 3x13x18 inch roasting pan. Pour the tomato sauce and olive oil over all.
Bake at 375 degrees F (190 degrees C) for 2 1/2 hours, adding a little water about halfway through cooking time to keep moist.
GREEN BEANS ITALIAN-STYLE
This is one of my favorite recipes. If you want a more substantial main dish, Italian sausage can be added. Slice and sauté before adding the garlic, then continue with the recipe as written.
INGREDIENTS
2 pounds fresh green beans, cleaned and trimmed of ends
4 large tomatoes or 1 pound canned, chopped
3 tablespoons olive oil
6 large cloves garlic, minced
3 tablespoons fresh chopped oregano or 1-2 tablespoons dried
Salt and pepper to taste
Snap the beans into 2-inch pieces, if desired. Blanch in boiling water for 2 minutes to soften slightly. Drain well.
Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until softened. Add the tomatoes, oregano, salt and pepper. Simmer uncovered, until tomatoes start to break down. Add the green beans and cook, uncovered, until bean are tender. Check often for moisture; cover the pan and reduce the heat if bottom is dry. Taste the beans for seasoning and add additional salt, pepper and oregano as needed. Cook for 10 additional minutes, or until beans are very tender.

I usually stir-fry them with brocolli and serve on rice with any kind of meat you like. If you are looking for a vegetarian dish, stirfry the green beans and in another saucepan, cook sliced green squash and tomatoes with a little pepper. It's a great way to eat both veggies and it adds alot of colour to the plate.

Make a pork tenderloin or a beef stir-fry with them.
You could roast a pork loin with them together in the oven. Slice the pork and put it on a platter with the green beans spooned around it. Sprinkle with some diced red pepper for a pretty presentation.

Make country style beans.
Pan fry bacon well done.
Add water, optional onions, and beans. Cover and cook slow over low heat. Just before serving add Accent. (it is MSG) but use only 1 tsp. to add flavor to the beans and not have the MSG side effects.
Serve with saute'd red potatoes. or Pork Chops.
