I want to try a new food, so if you have the recipe that would help. Nothing gross like flatted rabbit turd on a street, please.

Peanut Butter Chicken

It probably has an actual name, and is similar to the Thai dish Massaman Curry. I learned how to make it through a friend from Burkina Faso. The name "peanut butter chicken" came from a mutual friend from the Dominican Republic.
The quantities were never measured, and always "to taste."

Start with a stock pot on high heat
Add some oil - probably about a tablespoon or so
Cut up a chicken, or use boneless pieces if you prefer
Add the chicken to the pot, and lightly salt and pepper it
brown the chicken in the oil
add cut up onions and crushed garlic (leave the onions fairly large pieces - add as much as you like - I usually add one or two medium size)
saute the chicken, onion and garlic until the onions are just beginning to soften and cook
add in raw potatoes (cut into about 1" pieces - with or without peelings depending on preference)
the potatoes should almost fill the pot. You can also add in carrots if you like them.
Add enough water to cover everything and bring to a boil. Reduce heat, and simmer until the potatoes are done. This will also ensure that the chicken is done. Add in about 1-1.5 cups of peanut butter. This should thicken the liquid and turn it a nice orange/brown. You may need to add more peanut butter depending on the amount of water you started with. Bring it to a simmer again. For the final touch add in hot sauce. I prefer to use an asian chili/garlic sauce, but you can use tabasco, or any other chili based hot sauce.
Serve by itself, or over rice. Over rice is nice, as it cuts back some of the richness of the dish.

Broiled Tilapia Parmesan


Flavorful recipe for this farm raised fish that is easy and done in minutes! The fish is broiled with a creamy cheese coating for an impressive flavor and texture. This fish is delicate, and doesn't have that impressive fishy smell.

INGREDIENTS:
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets



DIRECTIONS:
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Strawberry Shake
Serves 2

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Tbsp Sugar Substitute (recommended: Splenda)
2 Whole Strawberries, garnish

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.

Pour into glasses; garnish each with a whole strawberry.

its so simple. baked spaghetti casserole. heres the recipe!

you will need: 3 quart casserole dish
16 oz thin spaghetti
large jar of prego-tomato, basil and garlic
bag of grated monterey jack and bag of grated cheddar
oregano
cooking spray
8 oz sliced mushrooms
2 pounds hamburger
sugar

directions
preheat oven to 350*
boil the noodles until soft, and brown the hamburger.
spray casserole w/ cooking spray
when noodles and beef are done, layer like this in the casserole dish: 1/2 noodles
1/2 beef
1/2 mushrooms
1/2 of each types of cheese
1 tbsp of sugar
1/2 jar of sauce.
repeat.
then put on some more cheese if you want, (this will take another bag), and put on some oregano.
bake uncovered for 20-30 minutes, but sit it on top of a baking pan in case of the cheese cooking over.

this is an awesome recipe. easy too.

fried chicken
1 broiler/fryer chicken, cut into 8 pieces
2 cups low fat buttermilk
2 tablespoons kosher salt
2 tablespoons Hungarian paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
Flour, for dredging
Vegetable shortening, for frying

Place chicken pieces into a plastic container and cover with buttermilk. Cover and refrigerate for 12 to 24 hours.

Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan. Once shortening liquefies raise heat to 325 degrees F. Do not allow oil to go over 325 degrees F.

Drain chicken in a colander. Combine salt, paprika, garlic powder, and cayenne pepper. Liberally season chicken with this mixture. Dredge chicken in flour and shake off excess.

Place chicken skin side down into the pan. Put thighs in the center, and breast and legs around the edge of the pan. The oil should come half way up the pan. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side. More importantly, the internal temperature should be right around 180 degrees. (Be careful to monitor shortening temperature every few minutes.)

1 pizza shell
1 20 oz spaghetti sauce
1 lb of BBQ Chicken
16 oz of cheese: Mexican Blend
other toppings you like: green peppers, mushrooms, bacon ...

preheat oven to 425 degrees
spray pizza pan with oil or butter
spread sauce on pizza shell, add toppings, heat til cheese melts
about 15 min

I like most all foods

Try Smoked ham, potatoes, and green beans with onions, put all of this in a crock pot cook about 2 hours and then it will be ready. It is so good. I am hungry just thinking about it.
